Ten years ago, a co-worker gave me this recipe. Since then, fried patties have been made only with this dough! Any kind of filling. The best filling for us is with mashed potatoes, and for the kids - with different marshmallows and custard! The recipe is very simple.

Ingredients for fried pies:

  • Water (warm water) - 0,5 l
  • Yeast (fresh yeast) - 50 g
  • Sugar (1 tbsp.spoon in yeast, 3 tbsp.spoon in the dough) - 4 tablespoon
  • Sunflower oil - 4 tablespoon
  • Salt (coarse salt) - 1 teaspoon
  • Wheat flour / Flour (The dough may take 4.5 to 6 cups of flour (1 cup=250g)) - 5 glass
  • Fat (I have 1.5 packs of cooking fat for frying. You may substitute with sunflower oil.)

How to cook fried patties step by step with photos

1. Prepare a container for frying dough (I have a wide 4-liter saucepan).

2. Pour 0.5 liters of warm water into it.

3. Take 50 grams of yeast (I have half of a 100 gram pack).

4. Crumble the yeast into a container and add 1 tbsp. 1 tablespoon sugar, mix well.

5. Add 1 level teaspoon of coarse salt and 3 tablespoons of sugar to a pan with warm water.

6. 6 Pour in 4 tablespoons. tablespoons sunflower oil

7. Now stir the yeast well and pour it into the pan (it has already melted).

8. Stir well with a spoon.

9. Sift in the flour one cup at a time and stir with a whisk.

10. As soon as the dough becomes thicker, knead with your hands.

11. This time the dough took about 5 cups of flour (it all depends on the flour, if the dough is "floating", add more flour). 12. Dough should be lightly coated with flour, covered with a lid and left in the fridge for 4 hours. After 4 hours you can make patties. (Check the fridge periodically. The dough may rise a lot and need to be kneaded).

13. Grease a pastry cutting board with oil and put a little oil in a bowl to dip the pastry in from time to time "dip" dip your fingers from time to time (to prevent the dough from sticking).

14. Remove the dough, divide it into two portions and return one of them to the pan.

15. Divide half of the dough into two more pieces, form two sausages and cut off equal pieces of dough.

16. Roll into balls; grease your fingers lightly with oil to prevent the dough from sticking to your hands (16 pieces of half the dough).

17. Then divide the other half of the dough in the same way.

18. My filling is mashed potatoes and ground black pepper.

19. We fill our patties, shape them flat. (It's good to have a helper, then one molds them and the other fries them!)

20. Take cooking fat or vegetable oil, and a container in which we will fry the patties (I have an aluminum pan and 1.5 packs of cooking fat). Take into account that the patties must be completely covered in fat when frying, i.e. е. float.

21. Melt the cooking fat (check the temperature for frying - throw a small piece of bread crust, if it sizzles and bubbles around, you can fry). Pull bread crust out of the fat.

22. Now fry the patties. First they lie on the bottom, then gradually rise.

23. Fry until golden on one side, then flip them over and fry the other side.

24. When the patties have fried to a golden color on the other side, lay them out on a plate covered with a paper towel, which we will renew with a new frying of the patties. I made 32 patties today.

The first patties immediately , т. к. The smell is "all over the place.". Finish frying the rest of the patties. Bon appetit!
