This pie is the result of a flight of my imagination, hence the name:-)) Imagine, a sandy base with flecks of raisins, prunes and dried cranberries, a fragrant layer of apple-pea puree, on it tender slices of apples, dipped in a thick grapefruit cream. It tastes very fresh, tender, juicy, rich and fantastically delicious!!!

Ingredients for fruit pie "fantasy":

  • Apple (I have the Golden variety, 2 are mashed, 2 are sliced) - 4 pcs
  • Grapefruit (red) - 2 pieces
  • Quince (large) - 1 pc
  • Butter (120 in batter, 80 in cream) - 200 g
  • Chicken egg (1 - in batter, 2 - in cream) - 3 pcs
  • Sugar (Dough - 3, puree - 1, cream - 2) - 6 tablespoon
  • Wheat flour / Flour (I use coarse grind.) - 1.5 glass
  • Raisins (pitted) - 2 tablespoon
  • Cranberries (dried) - 1 tablespoon
  • Prunes (pitted) - 4 pcs
  • Sour cream - 1,5 tablespoon
  • Soda - 0.5 teaspoon
  • Cinnamon (ground)
  • Cornstarch - 2-3 teaspoon

How to cook fruitcake "fancy" step by step with photos

Wash and dry raisins, dried cranberries and prunes

Chop them with a knife or mincer

Rub butter with sugar, add flour, egg, sour cream, baking soda (my sour cream was sour, so I left the baking soda out)

Add chopped dried fruit

Shape dough into a ball, place in fridge for at least 40 minutes.

Wash quince and apples (one in the photo, but I added another one later), remove core, cut into small pieces, you can remove the skin, but I did not do that

Sprinkle with 1 tablespoon of sugar and bake until done, I used a microwave on full power for 8 minutes., Then cool

Wash the grapefruits, I have 2 small ones, if they are big - one is enough

Squeeze out the juice, about 250 ml

In a separate bowl, mix soft butter, sugar and eggs, add the starch and grapefruit juice (dissolve the starch in the juice)

Cook over low heat, stirring all the time until it thickens, in my case the juice turned from pink to orange in the process

Cook like this, cool it down

Grind baked apples and quinces thoroughly with a blender (here I regret that I did not remove the skin from the quince, I had to make a little trouble), add the cinnamon

We get the dough, put it in a mold, make the rims, I have not greased the mold, I have a cake mold with a diameter of 22 cm

You can first bake the dough for 10 minutes. at 160-180 degrees. with parchment and beans, but I did not do that, I was in a hurry, everything was baked anyway:-))) put mashed potatoes on the dough

Spread apples on mashed potatoes (wash, peel and core, cut thinly), if you want - sprinkle with sugar

Spread grapefruit cream on top, bake in a preheated oven at 160-180 degrees for about 40 minutes. about 40 minutes. (honestly speaking, I forgot to time it, I was guided by the appearance)

Let cool completely before serving, preferably even in the fridge, the cake is very tender!
