Ingredients for the Geneva cheese pie:


  • Puff pastry (you can make it yourself, I have ready-made) - 500 g
  • Beef - 100 g
  • Hollandaise cheese - 50 g
  • Onions - 1 pc
  • Soy sauce - 3 tablespoon
  • Vegetable oil - 1 teaspoon
  • Dill (fresh, for decoration) - 1 bunch.
  • Salt (to taste)
  • Sweet-scented pepper (to taste)
  • Chicken egg (to grease) - 1 egg
  • Cream (for sauce) - 150 ml
  • Wheat flour / Flour (for the sauce) - 100 g
  • Butter (for sauce) - 50 g

How to cook Geneva cheese pie step by step with photos


[i]I based it on a recipe I found in a newspaper from a chef at a Moscow restaurant.[/i] 1. Choose lean meat, preferably veal, I have beef - marinate it in soy sauce for about an hour. (A curtsey to the authors of the contest: the ingredients of this sauce are amazingly laconic, just water, soy, wheat and salt.). After wiping the meat with a paper towel we cut it into thin slices. Season with salt and pepper.

2. Season with salt and pepper to taste. Grill until softened. Slice into julienne pieces. 3. Slice and dice onion and fry in oil.

4. Grate cheeses on a medium grater. In the original recipe we used equal parts Cheddar and Emmental cheese. We can substitute any semi-hard cheese. The main thing is the bright color and flavor. Then mix onion, cheeses and meat.

5. We roll out the puff pastry. People knowledgeable advise to move the rolling pin in one direction, so the pie promises to turn out puffy. It took half a packet - 250 grams of dough for my form. We grease the form beforehand with butter. We lay the filling.

6. Further we begin to imagine. Well, it's New Year's Eve, so all the family today I will offer to enjoy his, perhaps the main symbol - Santa Claus! We place the second, but smaller layer of dough on top of the stuffing. Crimp the edges.

7. Using light finger movements, transform the remaining dough into a hat and a beard. Cut rolled dough into two triangles. The apex of the first one ends with a bamboo ball.

The second triangle is narrow at the top. We cut the ends with kitchen scissors.

8. We transfer our "props" on the pie. Over the beard we put a balloon - it's a nose. "Cheeks" ♪ We pierced them with a fork so that Santa won't swell ♪. ♪ Eyes made of olives ♪. Greased with a beaten egg.

9. Above these brown eyes appear surprised eyebrows made of dill. It was Santa Claus who found out that he was going to blush in the oven for a full 20 minutes! (Temperature: 180 degrees for an oven with a fan, 200 degrees for a regular oven).

10. Well, that's where we can stop. Or you can try to make the sauce. While Santa Claus "is sunning himself", we make what chefs call "# A fatty paste #". Butter is put in a pan, as soon as it begins to boil, gradually pour in the flour, stirring it constantly with a spoon. You should get small crumbly lumps.

11. Set the mixture aside. In a saucepan mix 1 teaspoon of soy sauce and cream.

I couldn't find any Worcester sauce in Astrakhan. If you have it, add one tablespoon, flavorful. Bring this mixture to a boil. When it boils, add a fatty paste, the consistency should turn out a sauce.

The hat and the nose could have been sprinkled with tomato paste or ketchup instead of the egg, but after baking. Having delighted my family with the sight of this appetizing-smelling man, I mercilessly cut his beard into herringbones. Everyone gets such a nice and not at all coniferous. Decoration is purely to your taste and imagination. I got fresh dill, tomato, caviar. And I admit my mistake, I kept too much on heat and overdid it with flour, the sauce came out not liquid but in such an unusual way, in the form of squirrels) Don't judge too harshly, you are more than welcome to eat it!
