How quickly time flies... Yesterday the kids were eagerly grasping the basics of reading and writing at school, and today they're already taking their first tentative steps toward adulthood and college life! And my schoolmate is off to Moscow to get higher education. I decided to bake this cake in her honor. Well, welcome to the story of a desperate inexperienced cook.

Ingredients for pie "golden childhood":

  • Apple (small; for cream) - 3 pcs
  • Soda (carbonated; for biscuits) - 1 teaspoon
  • Honey (for biscuits) - 3 tablespoon
  • Wheat flour / Flour (for sponge cake) - 1.5 glass
  • Sugar (1 tbsp. for sponge cake + 1 tbsp. for cream) - 2 glass
  • Chicken egg (for the biscuit) - 4 pcs
  • Red currants (taken by eye; for cream) - 100 g
  • Sour cream (for cream) - 500 g

How to cook cake "golden childhood" step by step with photos

I found the recipe for the sponge cake at "Let's Eat at Home". Here is what we need for it.

Separate the egg yolks from the egg yolks.

Whip the egg whites with 0.5 tbsp. Put a little more sugar.

I managed to reach this consistency.

Add 0.5 tbsp. sugar and beat it.

But here's where I ran into a few complications. Put the honey in a saucepan and put it on the stove to warm it up.

Add the baking soda (I, by the way, thought that it was too much). Note: The pan must be "spacious" and high walls, otherwise under the influence of baking soda honey "cap" will want to leave the limits of the container!

So it worked for me...

I had to rush to find another pan. I didn't keep track of the honey and soda mixture while I was baking and overcooked it. We just need to get light brown streaks, not shiny bronze :D Well, lesson learned.

Gently mix yolks with half of the whipped whites.

Then we add the flour.

Next we have the unfortunate honey...

... And the leftover squirrels (not to be confused with the adorable redheads of the woods).

Place the dough in a greased baking dish and send it to the preheated (!) until the oven reaches 180 degrees. Keep biscuit until it is ready (about half an hour).

Making the apple cream. Heat peeled and seeded apples on stove until softened.

Whisk with a blender until you get the consistency you want (I have less than 50g of butter) "Smooth", with apple slices).

Mix 300g sour cream with 0.5 tbsp. sugar (it is better to whisk mixture until it becomes creamy).

Add applesauce to sour cream and sugar (well, in my case).

Now we get to the currant cream. 200g sour cream whipped again with 0.5 tbsp. sugar.

A cookery friend helps us to grind berries.

Then we add them to the sour cream and sugar.

Now we can assemble the cake! I cut the cake into 3 pieces and soaked each piece with a mixture of jam and water.

I dabbed the first crust with currant cream.

Next - apple.

I soaked the last one in leftover apple custard and left the coconut shavings on it.
