Dough

  • Wheat flour / Flour (360 g - 380 g) - 360 g
  • Cottage cheese - 90 g
  • Yeast (dry) - 1 teaspoon
  • Egg yolk - 2 pcs
  • Butter (soft) - 50 g
  • Milk - 150 ml
  • Sugar - 3 tablespoon
  • Vanillin - 1 sachet.
  • Salt (3/4 tsp. spoon) - 1 teaspoon

Filling

  • Cottage cheese - 90 g
  • Condensed milk (180 gr with sugar) - 0.5 jar.
  • clarified butter - 2 tablespoon
  • Egg white - 1 pc
  • Jam (raspberry) - 1 tablepoon

Optional

  • Dark Chocolate - 20 g
  • Coconut - 1 tablespoon
  • Egg yolk (+1 tablespoon milk + 1 pint sugar) - 1 pc

How to cook cake "golden leaffall" step by step with photos


1. Sift flour. Prepare starter. Mix 1 tablespoon of flour with dry yeast. Add 50 ml of warm milk and 1 tablespoon of sugar, mix with a whisk. Place the sourdough in a warm place until a foamy cap is formed (about 20-30 minutes).

2. Prepare the dough. Heat 100 ml of milk and melt soft butter (50 g) in it. Add sugar, 1-2 tablespoons, vanillin (1 sachet.), sieve-pounded cottage cheese (90g), 2 egg yolks and salt. Mix until homogeneous.

3. Add flour mixture in small portions to liquid mixture and knead the dough. The dough is smooth and elastic and does not stick to your hands. Form the dough into a ball, grease it with sunflower oil (0.5 tablespoon), put it in a bowl and cover with cling film. Put the bowl in a warm place for the dough to rise 2.5 times.

4. Make curd cream. Mix sweetened condensed milk with softened cottage cheese, egg white and thick grated jam. Put the bowl with the filling in the fridge.

5. Knead the dough, cover it with a towel and let it rise for 20-30 minutes "rise".

6. Line a baking tin (F = 26 cm) with baking paper and grease it with butter. Divide the dough into 2 equal parts. Pinch off small pieces of dough from each side and shape into a small spoon. Then roll out the dough into a thin round cake and put it in the cake tin, greasing it with melted butter.

7. Roll out two big pieces of dough into a sheet and grease it with melted butter, then put the filling and spread it out. The filling (cream) is a little runny, but when baked due to the egg white it won't spill out.

8. Roll up each layer of dough.

9. Dip a knife into the flour and cut the loaf into small pieces.

10. Spread the remaining cream (filling) in the center of the round cake and arrange in a circle "petals" .

11. Shape the middle of the cake out of scraps of dough. Cover the cake with cling film and put it in a warm place to double in size.

12. Then put the pie in a preheated 190 C oven until crusty, about 30 minutes. Then brush the pie with whipped egg yolk and finish browning in the oven. Coat the ready pie with sweet tea and put a towel over it. When slightly cooled, decorate the cake with melted chocolate and sprinkle with coconut shavings The cake is ready, have a nice cup of tea!
