Dough rises with yeast "on", very quickly and the pastries turn out delicious, fluffy, and fragrant.

Ingredients for a hearty meat pie with vegetables:


Stuffing

  • Yeast (dry, quick. "Haas") - 1 teaspoon
  • Sugar - 1 tablespoon
  • Milk (warm) - 100 ml
  • Wheat flour / Flour - 2 tablespoon

Dough

  • Stuffing
  • Milk (warm) - 150 ml
  • Salt - 1 teaspoon
  • Sunflower oil (+1 tsp.l. - to grease the bowl) - 5 tablespoon
  • Wheat flour / Flour (- 2 tablespoon for sourdough from total) - 310 g
  • Chicken egg (for greasing the cake) - 1 pc

Stuffing

  • Mashed meat - 150 g
  • Sausage - 4 pcs
  • White cabbage / Cabbage (chopped weight) - 700 g
  • Carrots - 1 pc
  • Tomato (large) - 1 pc
  • Seasoning (I have "Italian herbs") - 1 teaspoon
  • Onions (large) - 1 pc
  • Broth (meat or water) - 4 tablespoon
  • Butter (melted) - 2 tablespoon
  • Vegetable oil - 1 tablespoon
  • Garlic - 1 clove
  • Black pepper (ground) - to taste
  • Salt - to taste

How to cook hearty meat pie with vegetables step by step with photos


1. Make dough starter. Mix 2 tablespoon sifted flour with yeast (1 teaspoon w/o yeast). Stir in warm milk (100 ml) and sugar (1 tablespoon). Stir in the flour mixture. Put the bowl with the sourdough in a warm place until a foamy cap is formed, about 20 minutes.

2. Prepare the dough. Pour the stew into a large bowl. Add warm milk (150 ml), vegetable oil (5 tablespoon), salt (1 teaspoon) and mix. Into the liquid mixture, in small portions, add the remaining sifted flour. There is not enough flour, add more, but do not clog the dough with extra flour. The dough should be soft, pliable and not sticky to your hands.

3. Gather the dough into a ball. Grease a bowl with oil (1 teaspoon) and pour out the dough. Roll dough in oil. Cover the bowl with clingfilm to prevent the dough from getting weathered. Put the bowl in a warm place so that the dough rises 2.5 times.

4. Prepare filling. Fry peeled and chopped onion in vegetable oil until transparent and put 1/2 of it in a blender bowl.

5. Add minced meat and 1 clove of garlic to the bowl and grind with a blender.

6. Slice the prepared cabbage into julienne strips. Heat butter in a frying pan and add the cabbage.

7. Add onion (1/2 part), chopped julienne carrots and peeled tomato to the cabbage. Stew and stir occasionally. While browning add a little broth, seasoning, salt and pepper. Till the vegetables are almost cooked.

8. Add minced meat to the vegetable filling. Braise until the vegetables and minced meat are cooked through and the liquid has evaporated.

9. Take the stuffing from the pan and add chopped sausages and stir together. Stuffing is ready!

10. Knead the dough until risen.

11. Then divide it into 3 parts. Line a baking dish with baking paper and grease with butter (1 teaspoon).

12. Roll out one piece of dough to the size of the pastry (28 cm x 22 cm) and transfer with a rolling pin.

13. Prick the pastry (bottom) with a fork.

14. Divide the second piece of pastry into 4 portions and fashion them into long "strings".

15. Then from "ropes" form "harnesses".

16. Brush the edge of the pie with beaten egg and arrange dough.

17. Place the filling on the pie plate.

18. Roll out a third of the dough into a sheet and cut out strips. Cover the filling with shaped strips of dough. Then cover the pie with a light, dry towel and send to a warm place to rise twice.

19. Brush the pie with beaten up egg and bake in a well heated oven up to 180 C, ~ 30-40 minutes, until crusty. Sprinkle baked pie with water and cover with a dry towel. Enjoy!!
