I had a craving for something cherry, easy, homemade... And I couldn't help myself, so I went for an experiment. I've been baking this type of cake, but with plain cottage cheese for about 10 years now, so I decided to spice it up with a cherry! It turned out very delicious!

  • Chicken egg (1 egg yolk in the dough, 1 egg yolk in the filling, 2 egg whites in the filling) - 2 units
  • Sugar (1/2 cup in dough, 1-2 tbsp.Spoons to filling to taste) - 3/4 glass
  • Cheese cheese (5-9% fat content, in the stuffing) - 400 g
  • Cherries (pitted, frozen or in syrup) - 300 g
  • vanilla sugar (1 cachet) - 25 g
  • Sour cream (for stuffing) - 2-3 tablespoon
  • Soda dissolved in vinegar (for dough) - 0.5 teaspoon
  • Butter (in the dough, at room temperature) - 70 g
  • semolina (for stuffing) - 1 tablespoon

How to cook homemade cherry cheesecake step by step with photos


Cream the butter and sugar, stir in one egg yolk and add half a teaspoon of baking soda dissolved in vinegar. Gradually mix in the flour (I usually have 1 cup + - a couple of spoons, depending on the butter and egg size). It is most convenient to knead the dough with a fork, and when you have added enough flour, sprinkle the dough with flour (so that it does not stick) and gently knead with your hands, form a ball and put it away for 20 minutes. in the freezer or 30-40 minutes. in the fridge.

Let's make the stuffing: mix the cottage cheese with 2-3 tbsp. Sour cream, 1 egg yolk and sugar (vanilla and plain to taste), add 1 tablespoon of semolina. You need to knead or even mix these ingredients thoroughly until they become a creamy homogeneous mass, without any curd lumps (i.e. к. our goal is a light, mousse-like curd filling). Mixer whip 2 egg whites and salt into a stiff foam and very gently add it to the curd mixture, mix with a spoon (spatula) from bottom to top.

After making the filling, it's time to think about the dough! We take it out of the fridge, knead it with our hands into a small loaf, and then distribute the dough over the molds (greased with vegetable oil), forming the rims.

(My new mold was a little too big, and I had only symbolic rims, but that's ok!) Yes, I should mention that the collapsible mold is perfect for this type of baking! I messed up because. к. To get the pie by turning the mold will not work (it's very delicate), and I advise you either take a mold in which you will not be sorry to cut, or cover the mold with paper so that the edges of it stick out and they can get the pie!

Put half of the cottage cheese filling on the pastry, then put the cherries on it (since I don't like the cherries). к. cherries were sour, so I dusted them with sugar and a little breadcrumbs). On top of the cherries spread the rest of the filling, flatten and into the oven.

Bake the pie at about 180-200 degrees Celsius. about 40 minutes. But! Depending on your oven! (My oven is terrible - the bottom burns, the top is pale, so I preheat it to the max, and when I put the cake on, I turn it down and after 30 minutes, if the dough doesn't burn, I add a little more).

Actually, you'll know when the pie is ready... by the wonderful vanilla-cotton flavor that wafts throughout the apartment! Let the pie cool in the oven for a while (it will rise in the oven a lot when baked, but don't be fooled, the pie will subside as it cools down, it will get flattened)))). You won't have to call your family... They will come running for their portion of the delicious homemade pie!
