Ingredients for "Honey Apple Cranberry Pie":

  • Apple (Any kind, but most delicious with Antonovka) - 2 kg
  • Cranberries (fresh, but can also be frozen) - 150-200 g
  • Honey - 2 glass
  • Croutons (White breadcrumbs lightly browned in the oven) - 300-400 g
  • Chicken egg (chicken) - 1 pc
  • Wheat flour / Flour (highest grade) - 500 g
  • Sesame (seed, but you can use any nuts...) - 50-100 g
  • Yeast (baking or instant) - 100-150 g

How to cook "Honey Apple Cranberry Pie" step by step with photos

In our family, a careful, or rather sacred, attitude to bread was probably deposited at a genetic level ... The hungry thirties, the war and postwar years, which my parents experienced ... My childhood memories, when in the sixties, I was a six-year-old kid, was raised at 5 am and put in the bread line, and I stood in line until 12 pm to get their half a loaf of white bread ... Every family has stale bread or stale loaf, cut stale bread into thin slices and dried breadcrumbs... brown the breadcrumbs slightly in the oven, sort by type of bread, white breadcrumbs (from baguette, loaf, white bread), preferably finely grind, and make dough from them, as follows: Pour the cones of hops, 1 cup (if it does not grow in your neighborhood, it can be purchased at any drugstore) in a thermos and pour two glasses of boiling milk, let stand for 3-4 hours,strain the milk. To "hop" milk add 2 cups more milk, 4 cups of flour, 100-150 grams of baker's live yeast, or dry per 1 kg of flour, 3-4 tablespoons of sugar, and give a couple of hours to the brew (2 hours is the best time for the multiplication of yeast bacteria). When the leaven has risen, pour 300-400 grams of ground crumbs and a glass of flour, mix everything well and let stand for a couple of hours, during this time the crumbs will absorb most of the moisture, and if the dough has come out a little too fluid, add flour, after you have added flour and kneaded the dough well, let it stand for another couple of hours. When the dough has risen, it has an amazingly heady smell of hops and toasted croutons. Cut off a piece of dough you want and roll out a thin cake, 3-5 mm thick.

Cover the bottom and sides of a deep pan greased with vegetable oil or a mold with 5-6 cm high with rolled out layer of dough.

Roll out the layer of dough to the size of the pie top, make holes of 1 cm in diameter in it. All this must be prepared before mixing the ingredients of the future filling

Fill apples with 1 cup of corn or potato starch, pour 2 cups of honey, mix everything quickly, so that apples do not have time to lose their juice, and fill our pie. Spread the cranberries on top of the apples, but do not overdo it, preferably one cranberry per square centimeter.

Cover the pie with the top layer of dough, just as quickly.

Pinch the join of the two layers of dough with a pigtail.

Beat one egg well..

Using a brush, brush the egg on top of the pie..

Sprinkle sesame seeds liberally on top of the pie, and if you like you can sprinkle with nuts..

We put our pie in a preheated 180-200 degrees oven for 40-50 minutes..

It's a real beauty!!! And the smell is just magical!!!

Asian hospitality and Belarusian baked goods always reign in our house... Welcome to the tea party with pie!!! (Guests from Tajikistan brought the skullcap as a present, I didn't miss the opportunity to brag about the new thing)

This is the cut of this wonderful tasting and smelling pie. Thin pastry with a wonderful flavor of croutons, jelly flavored and sugary honey apples in contrast with the sour cranberries - what could be better for the morning tea party?!!! Minimum of calories maximum of pleasure!!!

The dough was so much, that there was enough for a second pie and pies with lingonberries and crushed potatoes... The traditional Sunday pancakes for my mother-in-law had to be given up until the next weekend..
