For sourdough

  • Yeast (dry) - 1 teaspoon
  • Milk (warm) - 50 ml
  • Sugar - 1 tablespoon
  • Wheat flour / Flour - 1 tablespoon

For dough

  • Milk - 50 ml
  • Butter - 50 g
  • Wheat flour / Flour (-1 tablespoon for sourdough) - 250 g
  • Chicken egg (egg yolk to grease the top, egg white in the dough) - 1 pc
  • Vegetable oil - 2 teaspoon
  • Salt - 0.5 teaspoon
  • Vanillin (or vanilla sugar if desired) - 1 sachet.

For stuffing

  • Onions (medium. head) - 1 pc
  • Chicken fillet (thigh is better) - 150 g
  • Champignons - 150 g
  • Sweet pepper (small) - 1 pc
  • Butter - 2 tablespoon
  • Seasoning (for chicken) - 0.5 teaspoon
  • Black pepper (ground) - 1 pinch.
  • Salt - to taste

How to cook kalach "horseshoe" with mushrooms and chicken step by step with photos


1. Make sourdough. Mix 50 ml of warm milk with the yeast, sugar and flour. Let warm the bowl with sourdough until a frothy cap forms. If a nice and creamy mug appears then you are sure to have a great cake!!

2. Prepare the dough for the cake. Melt the butter a little, as in the picture and cool it.

3. Separate the egg white from the yolk and whip with a whisk with a little salt. Beat the egg yolk with the sugar and a little vegetable oil (1 teaspoon). Put yolk aside.

4. In a bowl with the butter add the remaining milk. Then add the starter, egg white, salt and vanilla and stir.

5. Add sifted flour gradually (1 tablespoon at a time) into the liquid mixture and knead into a soft, smooth dough, not sticky to your hands. Grease a bowl with oil (1 teaspoon), roll up the dough and cover with clingfilm or plastic wrap.

6. Place the bowl with the dough in a warm place to rise 2-2.5 times, for 1-1.5 hours.

7. Prepare the filling. Peel the onion, finely chop and fry in butter (1 tablespoon) until transparent, 1 to 2 minutes.

8. Finely chop chicken fillet and add to onion, fry until white, 2 to 3 minutes.

9. Then peel and wash the mushrooms and cut them into small pieces. Add 1 tablespoon of butter.

10. Remove seeds from bell peppers, cut them into julienne strips and put them in the pan. Stir in your favorite seasoning, pepper and salt to taste. Stuffing is ready!

11. Dust work surface with flour. Roll out the ready pastry into 30x40 rectangular sheet. Visually divide the sheet into 2 parts.

12. Put stuffing on top and cut the bottom part of the dough as vertical stripes 1.5 cm wide.

13. Cover the filling with the top layer of dough and roll up carefully.

14. Cover the baking tray with baking paper and grease it with butter. Lay the roll on the baking tray and shape it into a horseshoe-shaped loaf.

15.. Turn the oven on to minimum 40 C and put the tray in the oven for about 20 minutes to increase 2-2.5 times. Or cover the loaf with clingfilm and leave to rise in heat.

16. Then switch the temperature of the oven to 180-190 C. Grease the loaf with whipped egg yolk and bake until done, about 25 minutes. Brush the baked loaf with melted butter and cool it under a towel. Bon appetit! Happy New Year!
