It all starts with making the dough. Pour 4 cups of flour into a bowl and mix with salt and semolina. Put 4 tablespoons of butter in a mug and melt it in the oven at 120 degrees. Also prepare 1 cup of hot water.

Now for the process. Make a small well in a hill of flour and pour the heated butter into it. Mix well with your hands. Then add hot water little by little, continuing to knead to make a dough that is thick, smooth and does not stick to your hands.

Wrap the dough in clingfilm or simply cover it with a towel and set aside for about 20 minutes. Let the dough mature.

While the dough is ripening, let's get busy with the filling. The filling can be any boiled vegetables mixed with mashed potatoes. As an example, let me tell you about the filling I made when making these Samos. So, first let's boil the potatoes. It is necessary to boil the potatoes in their peel so that all the useful substances and vitamins are preserved. Boil the potatoes for about 30 minutes, until they become soft. You can check their readiness by piercing the potatoes with a fork. If the fork has gone in gently, the potatoes are done.

Prepare any kind of vegetables. Anything you have on hand will do. I have cauliflower, frozen green peas, asparagus and Swiss chard.

Boil the vegetables in a little salted water until soft. It usually takes about five to ten minutes.

While the vegetables are boiling, mash the potatoes.

Now drain the vegetables and chop them in a blender. If you don't have a blender, you can put them through a meat grinder or just chop them finely with a knife.

Mix the mixed vegetables with the potatoes.

Salt to taste and add desired spices. You can also add tomato paste or hot sauce "Chili". I put chili sauce "Chili", т. к. I like it very spicy. It's also very desirable to add fresh herbs. Mix everything well and this will be our filling.

Now the main thing, the molding of our Samos! Divide the dough into balls the size of a couple of walnuts.

Roll out each ball into a 3-5 mm thick round patty and cut it in half.

Take one half of the flatbread and make a pile like this. Cut edges and fill with potato-vegetable mixture.

Fold the top to form a triangle. If the edges do not stick well, you can moisten them with warm water.

This is the other side of our Samosa.

Heat vegetable oil and fry our Samosas in it until golden brown. Fry in lots of oil over medium heat! This usually takes about five minutes. Blot the ready samosas with a napkin and serve with sour cream (or yogurt) and herbs (if desired).
