Ingredients for a turkey mushroom kefir pie:

For the pastry

  • Wheat flour / Flour (+ 2 tablespoon for dusting) - 280 g
  • Yeast (dry) - 4 g
  • Sugar - 2 teaspoon
  • Salt (or better to taste) - 0.5 teaspoon
  • Kefir - 160 ml
  • Vegetable oil (+ 0,5 tbsp.l. to grease the bowl) - 2 tablespoon
  • clarified butter (20 g in the dough and 3 tbsp.l. - to grease the cake) - 40 g
  • Sour cream (10% for greasing the pie) - 1 tablespoon
  • Sesame (roasted on a dry pan) - 1 tablespoon
  • Egg yolk (to grease the pie) - 1 pc


  • Turkey (turkey breast fillet from TM Indelight) - 300 g
  • Onions - 1 pc
  • Potatoes - 1 pc
  • Champignons - 100 g
  • Garlic - 2 clove
  • Vegetable oil - 2 tablespoon
  • Butter (melted) - 2 tablespoon
  • Seasoning (for chicken) - 0.5 teaspoon
  • Green onions (10 feathers) - 1 bunch.
  • Black pepper - to taste
  • Salt - to taste

How to cook turkey mushroom kefir pie step by step with photos

1. Make pie dough. Mix melted butter (20g) with vegetable oil and kefir.

2. Sift flour and mix with dry yeast.

3. Add sugar (1-2 teaspoon), salt (0,5-1 teaspoon) to the flour mixture and mix with a whisk.

4. Add flour mixture in small portions to the liquid butter mixture.

5. Knead the dough. Grease the dough and the bowl with vegetable oil and cover with cling film. Place in a bowl in a warm place to allow the dough to rise 2.5 times.

6. Prepare stuffing. Slice prepared turkey filet (Indelight trade mark) in small pieces.

7. Peel and cut onion and garlic cloves: dice onion and garlic slices. Fry onion and garlic in vegetable oil (2 tablespoon) until transparent. Add onion and garlic to turkey and mix together. Leave garlic oil.

8. Grate peeled small potatoes on a coarse grater. Mix the meat mixture with the potatoes and grind in the blender bowl until smooth.

9. Finely chop the mushrooms and fry in the garlic oil and butter (2 tablespoon).

10. Pour the mushrooms into the minced meat, season with chicken seasoning, ground pepper and salt and stir together.

11. You can add finely chopped green onions to the filling. Stuffing is ready!

12. Shape the pie. Knead the dough until it has risen and, cover with a towel, let it rise for about 20 minutes.

13. On a floured worktop, roll out the pastry into a 32 cm x 39 cm sheet, 0.5 to 0.7 cm thick. Without cutting, divide the dough into 3 portions. Cut one part of the pastry into shaped strips.

14. Spread out the filling evenly in the middle of the plate.

15. Cover the filling with one sheet of dough and prick the dough with a fork.

16. Decorate the top of the pie with shaped strips (3 of the pastry). The scraps of pastry can also be used to make shaped strips and a flower and decorate the pie.

17. Line a baking tray with baking paper and grease it with butter. Put the pastry on the baking paper. Mix melted butter (3 tablespoon) with liquid sour cream (1 tablespoon) and glaze the tart. We put the tray in the oven and turn on the minimum temperature of 40 C.

18. After 15-20 minutes, the pie will have doubled in size. Turn the temperature of the oven to 180 C and bake the pie until crusty, 35-40 minutes. Then grease the pie with whipped egg-yolk and sprinkle with toasted sesame seeds until it becomes a nice crust. Enjoy!!
