I first saw these patties in the culinary department of the Silpo supermarket. And with just this kind of filling: chicken with mushrooms. I bought them to try. And they were not cheap. I paid 50 hryvnias (about 150 rubles) for 5 small patties.). But I'm crazy about them. I found a lot of recipes on the Internet. But the filling is different everywhere: beef or lamb. And in its raw form. So here is my version of these Lithuanian patties, which I just fell in love with!

Ingredients for kibinai with chicken and mushrooms:


  • Chicken fillet (boiled) - 150 g
  • Onions - 1 pc
  • Champignons - 250 g
  • Mushrooms (white dry) - 1 pinch.
  • Soy sauce - 1 tablespoon
  • Broth - 5 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - 2 tablespoon


  • Wheat flour / Flour - 200 g
  • Sour cream - 60 g
  • Chicken egg - 1 pc
  • Butter - 75 g
  • Sugar - 0.5 teaspoon
  • Salt

I made from half of the ingredients I found in the recipe. That made 22 little pies. It was enough for me and my husband for two. You can make more, depending on the size of your family.

So, let's start with the filling, since. к. it needs to cool down so the dough doesn't spill out. I've shared with you my secret of "coloring" the flavor of mushrooms more than once. Store-bought mushrooms from farms are usually tasteless. To enhance the mushroom flavor, I use dried porcini mushrooms and soy sauce. So, we cut the mushrooms into small cubes.

Peel an onion and dice it, too.

Warm up a frying pan, put the oil in it. Put the onions in it. Fry until soft.

Add the mushrooms.

As soon as the liquid begins to ooze out, crumble mushrooms into the mushrooms and add a tablespoon of soy sauce. The soy sauce contains a natural flavor enhancer, which will add flavor to the mushrooms.

Fry until golden brown and transfer to a bowl to cool.

You can, of course, beat the chicken with a blender, but I prefer to chop it with a knife to get the pieces of chicken.

Now we proceed to prepare the dough. Cut the butter into slices in the flour.

Grind it with your hands to crumbs.

Prepare the liquid ingredients. Add salt and sugar to the eggs.


Add sour cream.

Also knead until homogeneous.

Pour liquid ingredients on oil and flour crumbs.

Knead the dough. The dough comes out very soft and pleasant to work with. Cover the dough with clingfilm and let it rest for 15 minutes to let the flour give gluten.

Pinch off small pieces of dough.

Roll out the cake 2-3 mm thick. Cut out a circle in the shape of the pie. I have a diameter of 10 cm.

Put a teaspoon full of filling.

Make a "pigtail" on top, like dumplings.

Place it on the baking tray.

Normally you brush an egg on the pastry for a shiny finish. I prefer a mixture of egg and cream.

Glaze our patties and send to the oven for 40 minutes at 180 degrees.

Leftovers can be used to make these little crackers. They take 20 minutes to bake.
