The main difference of kulebyaka from traditional pies is the complicated stuffing. It's made up of several kinds of filling (Stuffing arranged in a sequence and separated by thin, usually unleavened pancakes to prevent mixing. Thus, when cut vertically, each portion of a kulebyaka contains all types of stuffing. Kulebyaka - a universal dish. Depending on the type of dough and the filling, it can be served as an appetizer, as a main dish, or as a side dish (for example, instead of bread for soup or chowder). Kulebyaka is also distinguished by its more elongated, oval shape and a more puffy, convex, loaf-like shape. This shape allows the toppings to bake better and the slices to fit all the kulebyaka fillings in the portions. I want to suggest a Lenten kulebyaka with rice from TM "Agro-Alliance" Extra.

Ingredients for kulebyaka with mushrooms and rice:


Dough

  • Broth (Rice) - 700 ml
  • Yeast (dry quick-acting) - 11 g
  • Sugar - 3 tablespoon
  • Salt - 1 teaspoon
  • Vegetable oil (refined) - 5 tablespoon
  • Wheat flour / Flour (Dough should be soft and slightly sticky on hands)

Pancakes

  • Decoction (Rice) - 700 ml
  • Mineral water (carbonated) - 300 ml
  • Vegetable oil (refined) - 4 tablespoon
  • Salt - 1.5 teaspoon
  • Sugar - 1 teaspoon
  • Soda (quenched in mineral water) - 1 teaspoon
  • Leavening Agent - 0,5 teaspoon
  • Wheat flour / Flour (make dough like for ordinary pancakes, a little denser if possible).)

Filling

  • Rice (brown rice TM "Agro-Alliance" extra.) - 200 g
  • Champignons (fresh or frozen) - 350 g
  • Onions - 4 pcs
  • Spices ("for chicken") - 1 teaspoon
  • Hard cheese (lean) - 200 g
  • vegetable oil (Refined for frying mushrooms with onions) - 2 tablespoon

Also

  • turmeric (for dough coloring for decoration) - 0.5 teaspoon
  • Mayonnaise (to grease the cake before baking) - 1 tablespoon
  • Water (to glaze the pie before baking) - 5 tablespoon

How to cook Kulebyaka with mushrooms and rice step by step with photos


Let's make the stuffing first. We need to boil some rice porridge; I use brown rice from ТМ "Agro-Alliance" Extra, mushrooms (I had frozen mushrooms already cut up, but of course you can have fresh mushrooms, medium-sized onions, Lenten cheese and chicken spices, or any other spices you like.

Pancakes can be made with any Lenten recipe. I suggest making them with rice broth and mineral water. For this we need congee, mineral water, vegetable oil, salt, sugar, baking soda, baking powder, and flour. Fry the pancakes like we normally do. If the pan has no non-stick coating, we grease it with a brush with vegetable oil. The pancakes are more than we need, so you can divide the ingredients into 4, or like me, leave the rest for breakfast. We need 8 pancakes.

We pour 1.5 liters of rice in water and cook porridge, not crumbly, but a little viscous. We pour the broth into a separate container, wash the rice, but do not throw away the water, you may still need it, if the total volume of broth will not come out 1.4 liters. Dice mushrooms if fresh. Peel and dice the onions. Fry the mushrooms and onions in vegetable oil. Grate cheese on a coarse grater. The stuffing is ready!

While the stuffing cools down, let's make some dough. To make it we need rice broth, dry yeast, salt, sugar, vegetable oil and flour.

knead a soft, slightly sticky dough. Put it in a bowl greased with oil and cover with clingfilm. Set aside in a warm place until the dough has doubled in size.

After 40-60 minutes, knead the dough well, lay it on a lightly floured table and knead it a little. This amount of dough makes two kulebyaka. I baked one kulebyaka and froze the rest. When needed, simply thaw and let warm, then you can proceed with the baking.

Make a kulebyaka, we take 1/2 of the dough. It is better to form it on a wide chopping board, lay it on parchment and grease it with vegetable oil. Then put 2 pancakes side by side, then rice, then 2 pancakes, fried mushrooms with onions, 2 pancakes again, grated hard Lenten cheese and the last 2 pancakes. Assemble the dough and seal it. Put oiled parchment on top and baking tray. Turn the kulebyaka onto a baking tray with the help of a board.

We send it to bake in an oven heated to 180° for 40-45 minutes, then we take it out and decorate it with the dough as desired. I peeled off a little dough from the second part and mixed some turmeric for brightness, cut out the necessary elements. Dilute mayonnaise with water and mix until smooth, then smear the top of the kulebyaka and spread the elements of the dough. Now coat the decorations with thinned mayonnaise and send the cake in the oven again until it browns, switching the heat to the upper ten.

Kulebyaka with mushrooms and rice is ready! Let cool until warm and you can carve it.
