I feel like making pies, but I've had enough of potatoes and cabbage, and meat pies don't really fit in during Lent. I've never cooked with spinach. So I decided to experiment. It tasted very interesting, and the roasted garlic gave an eastern exoticism to the everyday pies. I made baked and steamed pies with this dough and filling. The latter are like manty. Dough

  • Wheat flour / Flour - 550...600 g
  • Turmeric (with sprinkles) - 1 teaspoon
  • Yeast (raw) - 25 g
  • Sugar - 1 teaspoon
  • Salt - 0.5 teaspoon
  • Water - 300 ml
  • Vegetable oil (+2 tbsp.l to work with the dough) - 3 tablespoon

Filling

  • Pumpkin (with slide, volume 250 ml) - 1 glass
  • Spinach (frozen) - 1 glass
  • semolina (with a hill. Semolina from TM Mistral) - 2 tablespoon
  • Garlic (head) - 1 pc
  • Onion (large) - 1 pc
  • Flax seeds (sprinkle on top) - 1poon
  • Vinegar (6%) - 2 teaspoon
  • Spices - to taste
  • Salt - to taste
  • Vegetable oil - 1 teaspoon

How to cook lean cakes step by step with photos


Start with the dough. Dissolve yeast with 1 teaspoon of sugar and 100g of flour in warm water, stir well and after the pastry has started to foam well, then knead the pastry. Add turmeric and salt, mix well. Add flour, knead and gradually add the rest. The dough should not be too hard. Add 3 tablespoon of vegetable oil as the last step. While kneading, the dough . I made the dough without eggs, but you can see how pretty the color is, thanks to the turmeric (not curry)

Butter the dough, cover the bowl with cling film and put it in a warm place for a good rise, knead it and leave it to rise again, after that you can cut the patties.

While the dough is rising, let's make the filling. Grate 1 cup of pumpkin on a fine grater, chop an onion with a medium dice. Defrost spinach. If you have fresh spinach - blanch it in salted boiling water for a minute, cool it under cold water, squeeze it out a bit and chop it. Peel a head of garlic, crush each clove with a knife and chop.

Add the onions to the bowl with the pumpkin, drizzle with 1 tbsp. vinegar, season with salt to taste, sprinkle with black pepper, mash the onions with a fork, then mix with the pumpkin and add 1 tbsp. Tbsp of semolina, mix thoroughly. Heat 1 teaspoon of oil in a small skillet over medium heat. oil in a small pan, add garlic, stirring constantly, and saute, as pictured. Flavor - aromatic! Add 1 teaspoon of vinegar, salt and ground black pepper to the spinach, stir, add 1 tbsp. Add 1 tbsp of semolina, combine into a homogeneous mass, add garlic from the pan, stir well.

If the dough is ready, you can proceed with the cutting. Divide the dough into portions; I had 24. Roll into balls, let the dough rest for a while. Flatten into flatbread (you can roll it out with a rolling pin), but the dough is very pliable and kneads well with a hand. In the center of the pancake lay out the filling, do not try to all at once, some of the balls cover with clingfilm, so as not to get too heavy.

Very nice dough, crispy crust. Flaxseeds are delicious after roasting. The filling is tangy and spicy. Cover the patties with a towel, let them thaw.
