The Easter table should be generous, rich and varied. And it doesn't have to be all sweet. What could be better than a wonderful kulebyaka with three kinds of fillings layered with thin pancakes.

Ingredients for kulebyaka "festive":


Yeast Dough

  • Wheat flour / Flour (250 ml) - 3.5 glass
  • Chicken egg - 2 pcs
  • Kefir (250 ml) - 1 glass
  • Yeast (SAF-MOMENT) - 2 teaspoon
  • Sugar - 2 tablespoon
  • Salt - 0.5 teaspoon
  • Egg yolk - 1 pc
  • Sour cream - 1 tablepoon
  • Butter - 100 g

Pancake batter

  • Chicken egg - 1 pc
  • Wheat flour / Flour - 2 pcs
  • Milk (250 ml) - 0.5 glass
  • Salt - 0.25 teaspoon
  • Sugar - 0.5 teaspoon

Stuffing 1

  • Potatoes - 4 pcs
  • Butter - 1 tablepoon
  • Chicken egg
  • Salt

Stuffing 2

  • Pork (boiled) - 300 g
  • Onions - 1 pc
  • Salt
  • Black pepper
  • Sunflower oil - 1 tablepoon

Stuffing 3

  • Mushrooms (pickled) - 450 g
  • Onions - 2 pcs
  • Sunflower oil - 3 tablespoon

How to cook kulebyaka "Holiday" step by step with photos


Mix the kefir, eggs, sugar, salt and saf-moment yeast in a bowl.

Saph-moment yeast never lets you down. Your pastries are sure to turn out fluffy.

Gradually pouring in the flour, knead the dough. Towards the end of the kneading process add melted butter.

Knead the dough for at least 5 minutes. Place in a warm place to proof.

When the dough has doubled in size, make a crumb and leave for a second rise.

Dice salted mushrooms (I have milk mushrooms) and onions. The mushrooms should be salted, not pickled. In my opinion, it tastes much better this way.

We fry the mushrooms and onions separately, then mix them together.

For the meat stuffing we dice boiled pork and onions. By the way, the meat can be minced with a meat grinder. But I would not recommend a blender, otherwise you will get meat mush. And we do not need it.

We fry the onion and mix it with the meat. Salt and pepper to taste.

Boil the potatoes and mashed potato them with butter and egg. Salt to taste.

You can make any kind of pancake batter you want. I mix the egg with the flour, salt and sugar. Then I gradually added the milk. I make 8 small thin pancakes.

Knead the dough for the second time. From one part roll out a rectangular layer, about 1 cm thick. Place two pancakes on it.

Place potato filling on the pancakes.

Then two more pancakes. On them we put the meat stuffing and two pancakes. Then we put mushroom stuffing and two pancakes. It looks like a brick.

Cover with remaining batter and decorate. Add some flour to the dough for decoration, so it becomes steeper and holds its shape better. Grease with egg yolk mixed with sour cream and let the kulebyaka rest for 20-30 minutes. Make punctures with a fork before baking in the oven to let the steam escape.

Bake at 180 degrees until the kulebyaka is nicely crusted. About 40 minutes.
