Ingredients for kulebyaka "sunny":


  • Milk - 500 ml
  • Cream - 200 ml
  • Sugar - 1.5 tablespoon
  • Salt - 1 teaspoon
  • Yeast (Safemomentum) - 4 g
  • Butter - 50 g
  • Chicken egg - 2 pcs
  • Wheat flour / Flour - 300 g

Dough for kulebyaka:

  • Wheat flour / Flour - 320 g
  • Milk - 100 ml
  • Chicken egg - 1 pc
  • Sugar - 1 tablepoon
  • Salt - 1/2 teaspoon
  • Butter - 70 g
  • Yeast (Safemomentum) - 4 g
  • Egg yolk - 1 pc
  • Soft cheese (for sprinkling the edge.) - 75 g

Stuffing #1:

  • Mashed meat (pork) - 200 g
  • Onions - 1 pc
  • Green onion - 1/2 bunch.
  • Vegetable oil - 1.5 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Garlic - to taste

Stuffing #2:

  • Bell pepper (red) - 3 units
  • Onions - 1 pc
  • Vegetable oil - 1,5 tablespoon
  • Salt - to taste

Stuffing #3:

  • Champignons (I have natural canned ones) - 150 g
  • Green onions - 1 bunch.
  • Vegetable oil - 1,5 tablespoon
  • Salt - to taste
  • Egg white - 1 / 2 pcs

How to cook kulebyaka "sunny" step by step with photos

You can make pancakes and stuffing the day before. Czar's pancakes: Since we are going to wrap the filling in them, I have reduced the amount of flour almost twofold. If you're making just pancakes, increase the flour. Dissolve yeast in warm milk, add half the flour and mix well, put in a warm place, the volume should double.

Separate the whites from the yolks.. Stir in the butter and egg yolks.

Add to the stew and mix well, then add sugar, salt, remaining flour and mix well again. Place in warm place for 1 hour.

Whisk the egg whites. Carefully fold whites and cream into the proofed dough.

Let the dough rise for about 15-20 minutes.

Bake in a very hot pan. Wipe frying pan with oil, then leave it greased.

Bake the pancakes on both sides, do not grease them when they are done! We get 20 pancakes for a given amount of dough. For kulebyaka we use 12 pancakes.

Stuffing #3: Chop mushrooms and fry until all liquid evaporates. Add onions at the end of frying, season with salt and take off the heat. Before stuffing the pancakes, add the protein and mix.

Stuffing #1: Slightly poach grated onion and garlic, add coarsely ground minced meat and fry with a fork until tender.

Salt and pepper the minced meat, add the green onions and mix. П. С. If you are cooking during the Cheesecake Week, I advise you to replace the stuffing with mashed cottage cheese, in which you add the egg yolk, dill, pepper and salt, some garlic, green onions and a couple of spoonfuls of sour cream. You can also make a green onion and egg stuffing.

Stuffing #2: Roast the peppers in the oven. Remove seeds and skin. Cut into slices.

Fry chopped onion in oil. Add the bell pepper slices and braise until the liquid evaporates.

Make dough for kulebyaka: Heat milk and dissolve yeast. Add all other ingredients and knead dough. Roll into a ball, put in a bowl and cover with cling film. Place in fridge overnight or at least 3 hours. The dough should double in size.

Assembly: When the dough has risen, leave it in a warm place for 1 hour. Knock back the dough and divide it into 2 portions. Roll out the dough into a circle 30 cm in diameter. Carefully trim the edges.

Step back 4 cm from the edge of the dough and press down with a plate of suitable diameter, making an overlap. Fold the second piece of dough in the same way.

Fill 4 pancakes with minced meat (filling #1), trimming the edges a little on the roll side and twisting them into a tube.

Place them on the dough in a circle following the borders of the marks.

Fill 4 pancakes with stuffing #2 in the same way and spread them in the second row of the circle in the same way.

Fill 4 pancakes with stuffing #3 in the same way and spread them out into the third row of the circle in the same way.

That's how it looks.

Sprinkle coarse grated cheese around the edge.

Sprinkle the second piece of dough on top and join the edges. Press on top of the mark with a salad bowl of the same diameter as the plate. Gently press down so that the border of the filling is better displayed.

Every 2.5 to 3.0 centimeters make cuts to the rim. Flip them over onto the butt well joining the bottom and sides, but opening the top slightly.

It turns out like this.

Make a sunny face and leave to rise for 20-25 minutes. Grease with egg yolk...

... And make three punctures with toothpicks.

Bake in a well heated to 180"C in the oven for 30-35 minutes. Depending on your oven! П. С. A word or two about the flour. Flour density varies around the world, so here's a TIP: follow your flour and add it gradually to the dough!!!

Leave the dumpling to rest for a while, cover with a towel and cut into portions.
