It seems to be the usual semolina with poppy seeds, but a tin of exotic fruits gave it this name and it turned out already cake with a fruit filling, I want to note very tasty. The structure is, as befits a semolina, a little dry and crumbly, but just enough, and the filling of juicy fruit, condensed milk, coconut and nuts, goes very well with this dough, which in turn is soaked with liquid from the top and becomes more tender and gets more creamy flavor from the condensed milk.

Ingredients for the semolina "exotica our way":

  • Fruit (canned, I had "Exotic Fruit Mix". Net Weight - 425gr, including 250gr of fruit, 450ml) - 425 g
  • Poppy - 3 tablespoon
  • Kefir - 250 ml
  • semolina - 2 glass
  • Wheat flour / Flour - 0.5-1 glass
  • Chicken egg - 2 pcs
  • Vegetable oil - 100 ml
  • Soda - 0.5 teaspoon
  • Sugar - 150 g
  • Lemon peel (from half a medium lemon)
  • Vanillin
  • Apple (for top, medium) - 1 pc
  • Butter (for the top) - 50-70 g
  • Condensed milk (for the top) - 300 g
  • walnuts (ground, for topping) - 50 g
  • Coconut (for the top) - 20-30 g
  • Lemon juice (for the top) - 2 tablespoon

How to cook "exotica our way" step by step with photos

Chop the fruit from a jar, strain and save the syrup. This was an exotic fruit cocktail. Just in case, I'll write the ingredients: red and yellow papaya, banana, guava, pineapple, coconut. Frankly speaking, after opening a jar I did not like the smell, do not think, not the one when the fish deteriorates)))) Just the smell of "exotic" was not familiar, the taste was something of it was nasty, I suspected guava, all the rest seemed to eat before))) because of this I added a fresh apple and set myself to the fact that the baking will bear everything and smooth out the uneven flavor))) My cooking was really good, the only thing that hurt the color after baking, I do not understand why, but it was absolutely scary and did not excite the appetite, bluish-threatening, if I did not do it, I probably would not try, but t. к. I knew (almost) what was in it, so I took the first piece for dessert))) Pour 1 cup (250 ml) of semolina and poppy seeds in kefir, pour the second cup of semolina in fruit juice overnight, or a day if you make the pie in the evening, for 7-8 hours. In separate bowls soaked because the kefir does not sour because of the juice and does not curdle, can all be filled together, I do not know, but I decided))))

Whisk the eggs with the sugar, then add the vegetable oil and whisk again.

Add soaked semolina and poppy seeds, vanilla and zest to the beaten eggs and mix everything together.

First, sift together 0.5 cups of flour with the baking soda. If the consistency of the dough is not liquid, you may need half a cup of flour. The consistency of the dough must be creamy and pouring out, so it is better to add flour in portions, it all depends on the products. Pour the dough into a baking dish and place it in the preheated oven for 15-20 minutes at 180°C.

Meanwhile prepare the fruit topping. Cut the fruit from a tin into smaller pieces, peel and chop the apple, mix everything together and season with lemon juice. Beat melted butter with condensed milk, add ground nuts, coconut, and mix. The nuts can be chopped rather than ground, whichever you prefer.

Then add fruit and mix again.

After 15-20 minutes, so that the top seizes, take out the semolina and spread the fruit mixture evenly on top. Put back in the oven for another 15-20 minutes until the dough is completely cooked.

Let the ready cake stand in the form for 10-15 minutes, then take it out. I made in a pan, not turn out, covered top with a flat plate, flipped, then I covered the bottom with another flat plate and flipped it face up. After the cake had stood for a while, the top got stiff and no harm done by flipping, except for the color )))) I can't tell what color it is, first time such a miracle)) When it cooled down I decided to disguise it with powdered sugar, it only helped for a photo shoot, the powder was absorbed and the blue eyes again, but it's still good and it's a fact!
