Ingredients for mascarpone pie


  • Water (cold) - 300 ml
  • yeast (fresh) - 25 g
  • Wheat flour / Flour (9 tablespoon with a slide into the dough + 2 tbsp.l. stuffing) - 11 tablespoon
  • Rye flour (with slide) - 11 tablespoon
  • Salt (with slide) - 1 teaspoon
  • Sugar - 3 tablespoon
  • Butter (melt) - 25 g
  • Sunflower seeds - 3-4 pcs
  • Mac - 2 tablespoon
  • Mascarpone - 100 g
  • Cream (38%) - 125 ml
  • Chicken egg - 2 pcs
  • Hard cheese (grated) - 50 g
  • Black pepper (ground)
  • Olive oil (to grease the pie)

How to cook mascarpone pie with yeast dough step by step with photos


Dilute yeast in cold water.

Then we add salt and sugar. Add two kinds of flour. We take a mixer with dough hooks and on low speed start mixing the dough. The dough will be thick. Melt the butter and add to the flour, this makes the dough easy to knead. It goes like butter :-D . On low speed knead our dough for 3-4 minutes, then increase the speed to medium and knead for 3-4 minutes more.

Add sunflower kernels. Knead until they "drown" into the dough.

Add poppy seeds. Knead some more.

The dough should be soft and elastic, sticky to your hands! Grease your hands with vegetable oil, form a ball of dough, cover the bowl with the dough and leave the dough to rise in a warm place for 30 minutes. It grows twofold.

After 30 minutes, we knead our dough, letting the air out of it. Cover a work surface with flour and with your hands, easily, the dough is very docile, knead and stretch it into a layer for a round baking dish.

I have a 26 cm mold. At the bottom of the form, line it with baking paper and grease the entire form with oil. Spread out our pastry, creating a rim.

I even had some dough hanging off the edges. And this is my helper, shaggy Dashka :-D ! And again on the proofing for 30 minutes.

Let's prepare the filling. With a whisk we beat mascarpone, cream and eggs.

Add flour and grated cheese. Season with salt and pepper.

Our dough will rise again. We have to press it a little with our hands and pour the stuffing.

Pinch the edges in the form of a flower. It's a little messy for me. But that's okay. You can grease the dough with egg, but my last egg went into the filling.*PPARDON

Bake at 200 degrees. Orient the filling, it should not be liquid. I checked with a chopstick. If the dough starts to burn - cover with foil. I use a disposable foil mold for this purpose, it acts as a lid :-D. I had it for about 50 minutes. But my oven is totally crappy! It's quite possible it would take you half as long. This is how it came out. I brushed the crust with olive oil on the way out and it shined!

We wait a little while. Take it out of the mold easily, cut it and eat it! Very tasty!

Soft dough, crispy crust, seeds and poppy seeds, and a tender, satisfying filling. I also added black olives, sliced into the filling. Or you can do both green and black. And you can make up your mind a little bit more!))) Yummy!
