The yeast dough is very easy to work with, the filling is delicious, its juiciness permeates the inside of the roll, and it's topped with a crispy yet soft crust. It's hard to describe - you have to try it... Those who like yeast baked goods will not fail, and meat lovers in general will be pleasantly surprised. It tasted better than I thought it would)))

Ingredients for meat loaf:


Dough

  • Wheat flour / Flour (double sifted) - 650 g
  • Milk (warm) - 1 glass
  • Chicken egg - 2 pcs
  • Yeast (fresh, if you use dry 10g.) - 30 g
  • Butter (rising) - 100 g
  • Sugar - 2 tablespoon
  • Salt - 1 pinch.

Stuffing

  • Meat (nonfat ham) - 400 g
  • Onions - 2 units
  • Carrots - 1 pc
  • Vegetable oil (for frying) - 40 ml
  • Butter (into the stuffing) - 30 g

How to cook meat loaf step by step with photos


First make a sourdough, dissolve yeast in a glass of warm milk. Add half the sugar, 2 tablespoonfuls of flour and mix everything well. Let it stand in a warm place for 15 minutes.

Sift flour twice, add sugar (other half), vanilla, salt and mix well. Gently pour melted butter into the risen stew, beat the eggs, and stir... Gradually pour in flour and knead a soft dough. Leave it in a warm place for 1.Let it stand in a warm place for 1-5 hours, then knead it and leave it for another 30 minutes.

While the dough is being prepared let's make the stuffing. Grind meat into minced meat, fry it, separately fry onion and carrot and join them with minced meat. Add butter to the pan, let it melt.

Mince the stuffing through the meat grinder again, this step is mandatory. The filling becomes more tender and homogeneous.

Divide the dough into three small (for decoration), medium (for the inner roll) and large (for the outer roll).

Roll out the middle piece into a long rectangle.

Spread the filling on it, generously, without sparing...

Now roll out the biggest piece of dough into a large oval. We put the roll with filling in the center and make cuts on the oval, as on the photo about a centimeter wide.

And we braid ribbons of dough like a basket.

This finished, neat roll we put on a baking tray. Butter the place where the roll will lie (it is a must, the oil will give the finished pie a delicious crispy crust and flavor).

For the decorations I rolled out very thinly the smallest part of the dough and with a shot glass cut out circles. Stack them one by one as in the photo (these will be the future petals). Use your hands to roll them out, the thinner the dough, the more delicate the roses will be.

And roll the circles as a roll, you get a rose on one side and the other.

Cut in half and you get two small roses. You can make as many as you want for decorations. Cut out some leaves.

Decorate the roll with the flowers and leaves...

Whisk one egg with a few spoonfuls of milk and brush the roll with a brush to coat the roses. Put in preheated oven for 30 minutes at 180 C. You're all set.)) Take out and cover with a towel until cool.

I had some dough left over, got three patties that disappeared instantly)))
