Ingredients for the meat pie:


  • Milk (warm, 37-38 degrees) - 1 glass
  • Yeast - 6 g
  • Wheat flour / Flour (as much as the dough will take) - 500-800 g
  • Chicken egg - 1 pc
  • Vegetable oil - 4 tablespoon
  • Butter (to grease the pie) - 20 g
  • Sugar - 2 teaspoon
  • Salt - 1/4 teaspoon
  • Beef - 700 g
  • Potatoes (large) - 2-3 pcs
  • Mushrooms (champignons, small jar) - 1 package.
  • Onions - 1 pc
  • Sour cream - 250 g
  • Greens (to taste)
  • Spices (to taste)

How to cook meat pie step by step with photos


First we have to prepare the dough. To do this, heat the milk a little (37-38 degrees). Dissolve yeast in it. In a separate bowl beat egg, sugar, salt and oil. Combine egg mixture and milk. Start adding sifted flour, a little at a time. Knead out a soft dough, which does not stick to your hands or the table. It takes quite a long time to knead the dough (about 20 minutes), as it really likes your hands and their warmth. The dough is placed in a bowl, cover with a towel (so it does not get too hot) and put in a warm place (I had it in the oven at 60 degrees). Let the dough rise 2-3 times, it takes about 1 hour. Then take out the dough, knead it and put it in a warm place to rise again. Again wait 2-3 times for the dough to rise. In the meantime we prepare the stuffing.

Here is the stuffing. To prepare it, you need to cut the meat and potatoes into medium cubes; cut the mushrooms in half and cut into slices; cut the onions into small cubes; chop the herbs (I had feathers of onion and dill). Add the desired spices, I had a lot of spices, as we love spicy dishes. Be sure to add ground black pepper - it gives a divine flavor. Fill everything with sour cream and mix thoroughly.

Now we take out the dough, knead it one last time and divide it into two parts. Put one part aside and roll out the other. Preferably roll out the dough to about 5mm thick. Line a mold or baking tray with baking paper. When the dough is stretched out to the size of the mold, carefully place it on the mold, flatten it and form the rims. Spread the filling evenly.

Roll out the second part of the dough like the first one. Place it on the cake. Pinch the edges and remove the excess pastry. We use them to decorate the pie.

We take a small piece of dough and make a long "sausage".

We put it "sausage" just below the middle of the pie, so that the sides are about evenly spaced.

Take another small piece of dough, roll it out and cut out rectangles of 1.5*10 cm. There should be as many pieces as you want spikelets on your pie. I made 9 spikelets.

Take one rectangle, sharpen it at both ends. Make incisions on both sides. Repeat this with all the slices.

Now roll out the remaining piece of dough, 15*30cm. At one end make frequent cuts in 2/3 of its length.

Then assemble our decorations on the pie. Put the cloth on the pie, so that the side with the cuts is where there is more room left over "sausage". Spread the cut strips - stalks - over the surface of the pie. Place the spikelets on top of them. Tie from the loose ends "of the sausages" bow. Brush the pie with egg and put it in the oven at 200 degrees for 1 hour. When the pie has browned enough - cover it with foil so that it does not burn. When the pie is completely ready - grease it with melted butter, so that the dough is not stiff.

When ready and greased we cut the pie into pieces and serve it up. It gives off such an aroma that the family will appear in the kitchen on their own and there will be no need to call them) Enjoy!!!!
