I present to you a meat pie with filling. My recipe from A to Z. Born in my head as soon as I read about the contest "The secrets of wild rice". I tried it more than once, you can appreciate and discuss the result of two weeks of effort. I hope you like it. My family loved it, even my mother-in-law... ENJOY!! The weight of the pie is 3600 grams. Content per 100 grams of food: Protein-12.53 g; Carbohydrates-18.09 g; Fat-8.03 g; Calories-194.8 kcal.

Ingredients for meat pie "fantasy":

  • Salt (1/2 tsp.l. in dough, for grating meat and stuffing to taste)
  • Mushrooms (chanterelles, stuffing) - 200 g
  • Spices (ground black pepper, ground lobster, curry)
  • Carrots (about 150 grams, stuffing) - 1 pc
  • Ground turkey - 600 g
  • Ground beef (veal) - 850 g
  • Pork (fillet, loin) - 40 g
  • Eggplant (stuffing) - 1000 g
  • wild rice (stuffing) - 150 g
  • chicken egg (about 60 grams, for the pie filling) - 1 pc
  • onions (about 120 grams, the filling) - 1 pc
  • Water (warm, batter) - 260 g
  • Olive oil (dough) - 230 g
  • Wheat flour / Flour (Type 500, dough) - 650 g

How to cook meat pie "fancy" step by step with photos

Our main ingredient.

Boil some wild rice (rice cooks for 30-50 minutes depending on the method). Slice eggplant and carrots and put into oven heated to 200 degrees for 15 minutes.

In the meantime, manually knead dough: flour + water + olive oil. Then put the two minced meat together and mix with seasonings and salt.

Cut the pork fillet into four pieces.

Divide the dough into pieces and roll out thinly. Do not worry, it stretches and does not tear. Cut into strips.

Line a baking tray (in my case, it is a 28-cm non-stick saucepan) with baking paper. Then arrange the pastry sheets so that they hang over the edge a little.

Fill the bottom of the tray with the minced meat about 1-1.5 cm thick, pressing it gently with your fingers.

Then put stuffing on sides about 1 cm short of the top.

Remove eggplants. Slightly browned.

I took frozen mushrooms, I stewed them in a pan without fat for 10 minutes, until the water evaporated.

We combine boiled wild rice, eggplant, diced carrots, fried onions, stewed mushrooms, Add spices and salt.

Fill the pie with stuffing.

Put the rest of the filling on top of the pie, not reaching the edges.

Fold in the middle the dangling strips of dough.

Roll out a piece of dough slightly larger than the diameter of the dish and cover the pie, pressing the edges under the wall behind the pie (between the pie and the paper)

Roll out 4 pieces of dough and wrap 4 strips of pork fillet in them.

Cut off the edges to a length no larger than the diameter of the dish.

Lay in a wicker and do not forget about the cut off pieces. Then pierce the pie with a knife, do not be afraid: a large number of holes will not hurt.

Cover with baking paper.

Cover with baking foil. And place it in the oven, preheated to 180 degrees, for 75 minutes.

Then remove the paper and foil. Preheat the oven to 200 degrees. Brush the cake with egg and leave it in the oven for another 10 minutes, until it is well browned.

And that's it "the blush".
