Ingredients for Milanese Pie:

  • Rice (boiled) - 150 g
  • Fish fillet - 500 g
  • Hard cheese - 4 tablespoon
  • Ketchup - 3 tablespoon
  • Chicken egg - 3 pcs
  • Milk - 400 ml
  • Butter - 1 tablespoon
  • Margarine - 3 tablespoon
  • Wheat flour / Flour - 4 tablespoon
  • Leeks (+ green ) - 150 g
  • Salt
  • Black pepper (and red)
  • Vegetable oil (to grease a baking tray)

How to cook Milanese pie step by step with photos

Dough: In a pan, melt the margarine, then pour in the flour..

When I fried the flour I thought it was a little steep, so I added a little more butter...

In this mass add grated cheese and ketchup... (you don't have to add ketchup.. Then the soufflé will be creamy..)

.. pepper and salt... (I have both red pepper (but it's sweet... not spicy) and black)

Pour in the milk... stir... (Actually.. The milk should be poured in after the flour has been added to the melted butter, but I forgot.. so I added it now...)

Whisk the egg yolks...

Take the mixture off the heat... Add the egg yolk.. knead well.. The dough turns out such a nice and colorful...

Whip cooled whites into a stiff foam...

Chop up the fish...

Put it in a bowl... Add 2 tablespoonfuls of flour.. Stir in..

Fry in 5 tablespoon vegetable oil.. (you'll see.. why so much).. hee-hee))

And at the same time... our whites with a spoon we gently incorporate into the mixture... stirring from bottom to top.. so the whites don't fall off.. or something like that...))

This is how the dough turns out.. I don't know if you can see it or not, but it's got egg whites in grains.. That's how it's supposed to be.. It shouldn't be a homogeneous mass..

Chop onions...

We take the rice... I have it already boiled...

Mix the rice with the chopped onions... add the rest of the oil.. from under the fish.. (from frying)

Turn the oven to 200 degrees... ... Take a mold.. !! Grease it with vegetable oil... Spread part of the dough.. A little less than half...

.. Part of the rice and onion mass on top...

... Then part of the fish..

Again part of the dough (4 tbsp. spoonfuls).. Spread with a cooking brush.. very handy!!!

Then the rest of the rice and onion filling.. and fish... Then... Pour the rest of the dough... (I forgot to take it off)))

Sprinkle with cheese.. and I lay out the onion feathers.. in this form.. You'll see what it's for later)))

Whisk well 1 egg + mayonnaise + sour cream.. (the ingredients do not fit)))

Pour this mixture on top of our cake... Put it in the oven to bake... on the lowest rack.. or just closer to the bottom (until the top browns.. if it browns quickly.. like I did.. Cover with foil.. and let it sit for a while longer!)

This is a miracle! (if you notice.. the spots on the onions.. ...are cut..... cracked very nicely))) Bon appetit!
