  • Semolina (TM "Mistral", can be replaced by wheat flour) - 30 g
  • Yeast (fast-acting) - 6 g
  • Salt - 5 g
  • Brown sugar (TM "Mistral") - 23 g
  • Water - 155 g
  • Chicken egg - 35 g
  • vegetable oil (+ 30g for greasing the dough) - 35 g
  • Dough leavening agent (you can replace it with baking soda) - 2 g


  • Couscous (TM "Mistral") - 75 g
  • Chicken egg - 3 pcs
  • Green onions - 80 g
  • Dill - 30 g
  • Butter (frozen) - 70 g
  • Salt (to taste)

How to cook cakes "milky way" step by step with photos

Sift flour and baking powder into a bowl, add quick yeast, salt, semolina - it will make the dough light and airy, mix. Dissolve brown sugar in a glass of warm water and pour into a bowl along with the dry ingredients, add an egg and knead a stiff dough. Gradually add oil and knead for 10 minutes. The dough should be firm and not sticky to hands and table. Place it in a bowl, cover with clingfilm or a towel and leave to rise for an hour. The dough should rise at least twice during this time. Why add the baking powder. The leavening agent contains baking soda, which makes the wheat gluten weaker and more elastic, which allows us to roll out the dough thinly.

Pour hot water in a 1:2 ratio, cover and salt it after five minutes and stir it.

In a container mix finely chopped greens, eggs, salt and couscous. Grate frozen butter into the stuffing and mix well. You can also add melted butter, but I prefer grated butter in the stuffing.

When the dough has risen, put it on the table, divide it into eight pieces and form oblong cylinders. Leave it to proof for 15 minutes, covered with a film or a towel.

From each cylinder roll out a thin strip 8 cm wide and 0.5 cm thick, with tapered ends (this determines the pattern on the cake), brush each strip with vegetable oil, roll up into a roll.

Cut the rolls into two parts with a bread knife with a serrated edge in the middle, cover with plastic wrap and leave for 15 minutes to rise. Begin forming patties. Put half a roll with a slit on the table, press it with your palm to shape a cake, turn the resulting cake with the slit upwards and roll it into an oval.

Put stuffing on obtained oval and press edges together.

Put the patties on a baking tray lined with baking paper or foil. Bake in a preheated 180 degrees oven until golden brown. It takes me 18-19 minutes, but it is better to be guided by the capabilities of your oven.

The patties are very soft, fragrant, small, with a cosmic pattern))

I usually put couscous in salads and made a side dish, but this was the first time I put it in the pie filling, and the family loved it.
