Dough

  • Wheat flour / Flour - 260 g
  • Butter - 170 g
  • Sugar - 5 g
  • Water (ice) - 60 g
  • Salt - 3 g
  • Egg yolk - 1 pc

Filling

  • Apple - 2 pcs
  • Apricot jam - 60 g

Marzipan

  • Almonds - 100 g
  • Powdered sugar - 100 g
  • Egg white - to taste

Prepare all ingredients

Let's start with the marzipan. It not only comes in handy for these cakes, but also for Swiss rolls or cake decorations. To make it, we need a Redmond macerator.

Place the almond flour in a bowl.

Then add the powdered sugar.

Add a little egg white.

Press a few times and the mixture starts to clump together.

Sprinkle powdered sugar over the surface and knead the marzipan into it.

Wrap the marzipan in paper and place it in the fridge for an hour. To give a characteristic flavor, they usually use either bitter almonds (we do not sell them here) or a flavoring agent - natural or artificial. I do not have them either. If you have any you can use. Add as you knead.

Put some of the flour in the bowl of the chopper.

The cold diced butter.

The other part of the flour, salt and sugar. In the pulse mode, chop into crumbs.

Pour in the ice water. I put the water bottle in the freezer for an hour beforehand.

Give it a few more pulses to combine everything.

Place the dough on a mat and bring it together in one lump.

Divide the dough into two pieces, put it in a sachet and put it in the fridge for an hour.

Prepare stuffing. Anything you want. Even sausage and ketchup. But here it's apples and apricot jam.

Chop the apples finely.

Add the apricot jam.

Simmer for about 15 minutes. And let it cool for a while.

Now let's get to baking. Turn on the multicooker and let it heat up.

Roll out the rested dough to a thickness of 2 mm.

Cut out the pieces for patties. You need two squares per pie. Or pie squares.

Dice up the marzipan.

Place a scoop of apples, top with marzipan.

Cover with the second square, pinch the edges and prick with a fork.

Grease with egg yolk.

Once the plates are hot place the patties.

Start the program on your phone for 10 minutes. If the patties are frozen set it to 15.

Wait for the program to end.

The patties without any liquid filling (jam or sauce) may be eaten immediately. With liquid filling it is better to cool a little (who doesn't know about the insidiousness of hot pies with jam).
