Ingredients for mini quiches with mushrooms and ham:


For the dough:

  • Wheat flour / Flour - 500 g
  • Yeast (dry (I had 12 g in 1 bag)) - 1 sachet.
  • sugar (or 3 tbsp.l. no sprinkles) - 50 g
  • Chicken egg - 2 pcs
  • Milk - 200 ml
  • Butter - 150 g
  • Salt (beverage)

For stuffing:

  • Mushrooms (Any kind, I took mushrooms) - 350 g
  • Onions - 1 pc
  • Ham - 150 g
  • Butter (2 tbsp.l. for the sauce, the rest for frying the mushrooms) - 60 g
  • Parsley - 1 tablepoon

For the sauce:

  • Wheat flour / Flour - 1 tablespoon
  • Cream - 150 ml
  • Spices (salt, pepper to taste)
  • Egg yolk (1 for sauce, 1 for greasing patties) - 2 pcs

How to cook mini quiches with mushrooms and ham step by step with photos


This is a new dough for me. Maybe someone else makes the same pastry and the recipe will seem common, but I will still post the recipe because it is very delicious, soft and without it, they will not be the same patties that I want to share with you. So: Dissolve a sheet of dry yeast in warm milk, add 1 teaspoon of sugar and 2 tablespoon of flour. Stir well to dissolve the yeast. Cover with a dry towel and leave in a warm place for 15 minutes. Meanwhile beat 2 eggs with a whisk. After 15 minutes, carefully portion out the rest of the flour into the stew (it has begun to bubble a little by this time), add the remaining sugar, warm (melted) butter and eggs. Add salt and knead the dough, then leave to stand in a warm place while we make the filling and sauce.

Sauce: Heat 2 tablespoon butter in a saucepan and add flour and mix gently.

Add cream, salt, pepper, bring to the boil and remove from heat. Stirring sauce, add 1 egg yolk and let cool.

Stuffing: I used mushrooms. Wash and peel mushrooms and cut them into small cubes about 1-1.5 cm thick. When frying mushrooms give out a lot of moisture, so that they are fried, but not stewed boiled put them on a heated and dry pan and wait until the moisture evaporates (stirring occasionally). P.S. If you use other mushrooms, you need to boil them for about 10 minutes and then fry them.

Only afterwards add chopped onion and remaining butter. Fry until the mushrooms and onions are cooked through.

Cut the ham into about 1 cm cubes. Add it to the mushrooms and onions.

Add chopped parsley and sauce. Stir everything well and heat through, adjusting the salt/pepper if necessary.

Take out the dough, knead it and leave it for another 30 minutes. By this time it will have risen nicely. I thought it was porous, airy. When you take it out, it instantly falls off, but when it stands, it's airy again.

Then roll it out about 0.5 cm thick and use a mug to cut out circles 8 cm in diameter. Put a teaspoon of filling on each circle. Then, holding the circles in your hands, gather all the dough in the center and fasten it as shown in the picture. Shape into an oval shape and roll in your hands to smooth out all the seams.

Place the patties with the seam side down on a baking sheet lined with parchment paper. Dissolve a second egg yolk with a little milk and brush the patties with it. Let them rise for 15 minutes. Put them in an oven heated to 200 degrees and bake for 25 minutes. The main thing is not to overbake, otherwise the dough will become hard.

Take the patties out of the oven and let them cool. Now you can taste them. Enjoy!!
