Dough

  • Wheat Flour / Flour - 900 g
  • Kefir - 250 ml
  • Milk - 250 ml
  • Vegetable oil - 150 ml
  • Egg white - 2 pcs
  • Yeast (fresh, if dry - 9g) - 27 g
  • Salt (one pint of total amount for dough) - 1 tablepoon
  • Sugar - 1 tablespoon

Stuffing

  • Stuffing - 550 g
  • Onions - 2 pcs
  • Potatoes - 2 pcs
  • Sweet paprika - 0.5 teaspoon
  • Zira - to taste
  • Black pepper (ground) - 0.5 teaspoon
  • Dill - to taste

Other

  • Egg yolk (to grease the dough) - 2 pcs

Friends, before I bring this recipe to your judgment, I tried it out twice - the first time as a guest, the second time I did "field trials" at the cottage and "test subjects", unsuspecting of my insidious plan, were my wife, father-in-law and mother-in-law. In general, the test was excellent, the verdict was unanimous - delicious! A pre-dawn sample is on the picture! Now let's proceed directly to the recipe itself and prepare the necessary things for baking dough.

Pour warm milk into a bowl, add sugar, crumble the yeast, add warm kefir and whisk to mix until smooth.

In the same bowl add vegetable oil, a pinch of salt from the total amount and mix well. Pour in the egg white and again stir everything thoroughly. Then we begin to add sifted flour gradually, in a couple of steps, and knead the dough. Knead it in a bowl for five minutes, then transfer it to a work surface and continue to knead for five minutes. Don't ask why you should do it this way and in this order - I have no idea, I have not deviated a single millimeter from the instructions...

The dough should turn out soft, pliable and not sticky to your hands... Then we send it in a bowl, cover it with a lid or cling film and leave it in a warm place for 30-40 minutes. I put it in a lightly heated oven.

Now it's time to do stuffing, let's prepare everything you need...

We need 250 grams of stuffing (I have pork) and about the same amount of finely chopped meat, Add the raw potatoes chopped into small cubes, Then finely chop onion, chopped small bundle of dill. Then we add the remaining salt, paprika, pepper, and cumin rubbed between the palms of our hands. Mix everything thoroughly, enjoying the spreading aroma...

In half an hour, my dough has risen more than twice, began to undermine the film and in the resulting gaps burst in the form of sausages outward, I had to get out and give a good crumbling...

Now begins the creative part of the recipe and will decide the fate of our pie venture... We divide the dough into 16 equal parts and roll it up into a kolobok...

We take the first kolobok and roll out a square about five millimeters thick

Then bend all the edges to the center in a strip of about 2.5-3 cm, pressed to the bottom. The moment is very important, it determines the appearance of ready patties. I've neglected it, and as a result I got not a very attractive appearance of the finished product...

Turn our square, fix it upside down and press it down again. Put a tablespoon of filling in the center. It's best to weigh the stuffing and determine the weight of each portion, so you don't have to wonder where it went or why there was so much left over... The weight of my stuffing was 54 grams, the dough was 98 grams

Then join the opposite ends of the dough and seal it well...

Repeat this with the other ends...

Then peck the whole future tart thoroughly, press the center with your palm, turn it over and put it on a tray lined with parchment paper.

Cover with a towel and leave in a warm place for half an hour to rise. Ideally, the pie should turn out like the one in the middle row on the right. Since it was a test batch, I didn't pay much attention to the details, so I ended up with half of the shoddy dough...

After half an hour the dough has risen again, and we need to grease the patties with two yolks, diluted with half a tablespoon of water. We put the tray in the oven heated to 180 degrees for half an hour or until the patties are nicely crusted.

When golden, take them out, put them on a plate and, holding back a little, wait for them to cool...
