I had a craving for some delicious tea. But not cake. The cake just a few days ago my daughter baked. I wanted something completely different, new... So I went digging through my culinary archives... And here it is! I think this is exactly what I need right now. It's a recipe I've been waiting for my turn!!! And I made the right choice!!! It's not a pie, it's a miracle!!! Without false modesty, I say that this cake is a 100 points ahead of many cakes, especially store-bought!

Ingredients for the cake "mosaic":

  • Wheat Flour / Flour (500 g for dough, 175 g for streusel) - 675 g
  • yeast (for dough) - 20 g
  • Sugar (Dough - 80 gr, stuffing: poppy seed - 50 gr, cottage cheese - 80 gr, streusel - 100 gr) - 310 g
  • Milk (Dough - 250 ml, poppy-seed filling - 250 ml) - 500 ml
  • Butter (Dough - 80 g, poppy-seed filling - 20 g, streusel - 100 g) - 200 g
  • Chicken egg (Dough - 1, stuffing: poppy seed - 1, cottage cheese - 1) - 3 units
  • Salt (for dough - 1 pc)
  • Poppy (food) - 100 g
  • semolina (for filling with poppy seeds) - 30 g
  • Rum (in stuffing: poppy seed - 1 tablespoon, cherry seed - 1 tablespoon) - 2 tablespoon
  • Cinnamon (ground, 1/2 teaspoon each in poppy seed and streusel) - 1 teaspoon
  • Cheesecake - 500 g
  • Vanilla sugar (1 sachet for the cottage cheese filling and 1/2 sachet for the streusel)) - 1.5 sachet.
  • Jam (cherry, a jar) - 300-400 g
  • lemon zest (into the poppy seed filling with 1/2 lemon)

How to cook cake "mosaic" step by step with photos

Prepare all the ingredients for the dough so you have everything on hand.

Heat milk, dilute yeast, add 1 teaspoon of sugar and 2 tablespoon of flour. Stir together. Cover the top with flour, cover with cling film or napkin and put in a warm place. When you can see some visible cracks on the surface, the batter is ready.

Sift flour into a pile, make a well, and pour the stew into it. Knead it lightly with a little flour. Melt the butter.

Add the rest of the ingredients (sugar, butter, egg, salt) to the flour and knead the dough.

Roll it into a ball, put into a bowl, cover with cling film and leave in a warm place to rise. While the dough is heating prepare the toppings. We will have three of them.

First, make the poppy seed filling. Prepare all the ingredients. Wash the poppy seeds and dry them on a napkin. Then grind it. I did it in a chopper, you can use a mortar or coffee grinder.

Boil the milk with the butter and lemon zest. Pour in the semolina and cook over a low heat, stirring, for 5 minutes.

Remove from heat, add crushed poppy seeds, sugar, egg, rum and cinnamon. Stir to combine . I didn't have any rum, so I used rum essence. While the poppy seeds are cooling, we make the cottage cheese filling.

Whisk the cottage cheese, eggs, sugar and vanilla sugar in a blender until smooth. You may need to add a little milk - it depends on the moisture content of the cottage cheese. However, the filling should not be runny, it should not spill out.

Cherry filling: empty the jam jar, add the rum and mix. Now all three of our toppings are ready. Yes, and the dough is ready.

You should put the dough out on the table, knead it well and then tap it about 10 times to let the air collect in the dough escape. Now our cake will come out perfectly fluffy and light.

Set the dough aside and let it rest for a while. In the meantime, we make the streusel. Mix the flour, sugar, vanilla sugar and cinnamon. Melt the butter. Drop by drop from a spoon, pour the oil into the flour mixture while kneading and stirring with your left hand. You should get a greasy crumb like this. I have to tell you, I got a lot of streusel, it did not go all out, so I think you can safely make half a portion.

Grease the baking tray (I used the biggest one I had, but it had low sides and the cherry filling dripped while baking) with high sides, line it with baking paper, then grease again with butter. Pin the dough out to about 1 cm thick, place it in the baking tray. Spoon our filling on top, alternating... Or randomly, as you like...

Sprinkle the cake with streusel. Bake at 220°C for 20 minutes, then lower temperature a little (to 200-180°C) and bake for 10 minutes more.

Remove the cake and cover with a napkin. Do not cut it into pieces until it has cooled completely. THIS IS A FANTASTIC, DELICIOUS PIE!!! LIGHT, FLUFFY AND TENDER!!! THE COMBINATION OF TOPPINGS IS UNPARALLELED!!! We couldn't tear ourselves away. You should join us. BON APPETIT!!!
