Ingredients for the puff pastry "panda":


  • Milk - 1 glass
  • Yeast (7g.) - 1 sachet.
  • Sugar (+2tbsp. teaspoonfuls for sourdough) - 1 glass
  • Wheat flour / Flour - 4 glass
  • Butter (+25g. into the chocolate) - 150 g
  • chicken egg (2 for dough, 1 for grease) - 3 pcs
  • Sour cream (with a slide) - 2 tablespoon
  • Salt (powder)
  • Vanilla sugar - 1 sachet.
  • Vegetable oil (odorless, a little, to work with the dough)
  • Jam (I have peach) - 200 g
  • Milk chocolate / Chocolate - 50 g

How to cook muffin tart "panda" step by step with photos


We make the dough by sourdough method. For the sourdough, add yeast to warm milk (I have dried yeast, but you can use fresh yeast, for this quantity - 40g.).

Add 2 tbsp. tablespoons of sugar and 0.5 cup of flour. Stir and leave in a warm place for 20 minutes.

Beat eggs (2 pieces) with sugar and pinch of salt. I have brown sugar, but you can also use regular sugar.

When the batter has risen, add eggs and sugar.

Melted butter (not hot). I melt it in the microwave on low heat).

Add sour cream.

Vanilla sugar.

And flour. Knead the dough. First in a bowl, then on a floured counter. A little more flour may be needed. The dough should not fall out of your hands, but it should be elastic. Knead for about 10 minutes.

Put the dough back in the bowl, cover with a towel and leave in a warm place (you can put the bowl with the dough in a big bowl of warm water, it will rise faster).

This is how the dough rose.

We tear off a piece of dough (half). Roll it out on the table (we don't need to dust it with flour, just oil the table and our hands with oil), make a square piece about 0,5 cm thick.

Smear with jam.

And gently roll up into a roll.

All edges should be pinned so that the jam doesn't .

Put the roll on the baking tray greased with oil. This will be a tree branch for the panda. Shape the panda itself. Here we don't make photos step by step, I was too carried away with the process. In general, first the body, then a paw, which embraces the panda branch, the head and small parts. Nose, ears. We leave it on the proofing, for 30 minutes.

Glaze the cake with lightly beaten egg (it is not necessary to beat it too much, the main thing is to mix the egg yolk with white).

And bake it in a preheated 190 degrees oven until it is melted. I baked for about 40 minutes. Meanwhile, melt chocolate with a piece of butter in a water bath. I had a porous one, but it is better not to use it, because it makes grains afterwards.

Using a brush, put the chocolate on those places in the panda, which should be dark (paw, ears, nose, eyes).

Bake in a preheated 190 degrees oven until done. It took me about 40 minutes to bake. In the meantime, melt chocolate in a water bath with a piece of butter. I had a porous chocolate, but it is better not to take such, when applied, it is picked up in flakes.

Using a brush, put the chocolate on those places that should be dark (paw, nose, eyes and ears).
