There has always been a saying in Russia "bread is the head" и "Bread and porridge is our food". And indeed, what comes to mind first when one is hungry? Certainly not an elaborate dish baked with some kind of sauce, but an ordinary sandwich or pie. But the possibilities of yeast dough are so versatile that it can be used to bake not only ordinary bread, but also a beautiful cake that will decorate the holiday table. The loafs are especially beautiful. I'm still far away from loafs, but here is a dessert cake I baked, and cane sugar TM helped me in this " Mistral", which filled the pastry with caramel flavor and aroma. I hope I succeeded! Ingredients for granola pie "fancy":


  • Wheat flour / Flour (-/+) - 400 g
  • Whey (milk, milk+water) - 200 ml
  • Butter - 70 g
  • Chicken egg - 1 pc
  • brown sugar (cane unrefined ТМ "Mistral") - 50 g
  • Salt - 1/2 teaspoon
  • Yeast (fresh, 5-7 grams of dry) - 15 g


  • Cereal flakes - 100 g
  • Nuts (favorite nuts and seeds, I have cashews, sunflower seeds and flax seeds) - to taste
  • Apple (sour-sweet, hard) - 2 pcs
  • Dried fruits (any, I have apricots, prunes, dried cherries, raisins) - 100 g
  • Brown sugar (Unrefined cane TM "Mistral", 50 g for muesli and 50 g for sprinkles) - 100 g
  • Butter (50g for muesli and 30g for buttering the dough) - 80 g
  • Spices (cinnamon, vanilla etc.) - to taste

How to cook muffin tart with granola "fantasy" step by step with photos

First, activate the yeast: heat 100 ml of whey or milk or water, dissolve 1 tsp of the sugar, crumble the yeast, add 1 tablespoon of flour, stir well and leave in a warm place until bubbly. Leave in a warm place until bubbling, about 15 minutes.

Melt and cool the butter.

Measure out the sugar and prepare the eggs. For this cake, I've chosen sugar cane, unrefined TM "Mistral". It has a bright flavor and is indispensable in desserts, gives them an amazing caramel flavor.

When the yeast "has come to life", add the remaining 100 ml warm whey, an egg, sugar and 1/2 teaspoon salt. Stir to mix . Add melted butter and mix well. Then, add gradually sifted flour and knead the dough. You may need more or less flour. The dough should be soft, don't worry if it's a bit sticky on your hands. Grease a bowl and put the dough in it with oil. Cover with cling film or a towel and leave in a warm place for 1.5-2 hours to rise. When the dough has risen, knead it and leave for a second rise.

While the dough is cooling, prepare the filling. For this mix cereal flakes and nuts with sugar, add butter cut into cubes and grind to crumbs. Spread the resulting crumbs on a baking tray and bake at 180 degrees for 5-10 minutes. Bring 100 ml of water to a boil, dissolve the sugar and add chopped dried fruit apples. Cover and let stand.

This is how the dough grew. I left it in the multicooker on the program for the coming dough. You can see from the marks in the bowl how it has sprouted.

All done, you can start to shape the pie. Remove the dough and give it a good crumbling. On a lightly floured surface, roll out the dough into a thin sheet of about 5-7 mm. Brush with 30g melted butter. Sprinkle 50g of sugar on top.

Sprinkle granola on top, leaving 1-2 cm off the edges.

Drain the fruit, preferably over a strainer, so that the filling is not too wet. Spread the dried fruit on top of the granola.

Roll up the pastry with the filling. This has to be done carefully. As tightly as possible so that "the filling" so that the filling doesn't escape. Form the roll into a circle or snail even more carefully and put it into the prepared baking tin. The wider the layer, the wider the roll and you can make a snail. I made a long loaf, but it was narrow, so I just joined the edges.

Cover the dough piece and leave to proof for 20 minutes. Before baking, brush the crust with egg yolk or milk. I don't grease, I just turn on the high heat when the pie is almost done.

Bake the pie at 180 degrees for about 40 minutes. Check the middle with a splinter, it should be dry, the pie needs to bake well.
