Ingredients for yeast pie "to my friends!":


  • Milk - 300 ml
  • Yeast (pressed) - 35 g
  • Sugar - 4 tablespoon
  • Salt - 1 pinch.
  • Egg (+1 egg for grease.) - 2 units
  • Vegetable oil (odorless) - 50 ml
  • Margarine - 50 g
  • Wheat flour / Flour - 700 g
  • Vanillin - 1 g

Cottage cheese filling

  • Cheese cheese (5% fat) - 500 g
  • Egg yolk - 1 pc
  • Sugar - 5 tablespoon
  • Potato starch - 1 teaspoon
  • Vanillin - 1 pinch.

Apple filling

  • Apple (I took red ones) - 3 pcs
  • Sugar - 3 teaspoon
  • Cinnamon - 1 teaspoon

Lemon filling

  • Lemon peel (from one lemon)
  • Butter (melt) - 4 tablespoon
  • Sugar - 3 tablespoon

How to cook yeast pie "to my friends!" step by step with photos

We are going to make a plain dough. Add yeast, sugar, salt, beaten eggs (2 patties), oil, melted margarine and vanilla into slightly warm milk and mix well. Then gradually add the sifted flour. I went all the flour, but may go more or less, as everyone's flour is different. Knead the dough (it should be fairly dense, but soft and not stick to your hands), cover it and let it stand for 10-15 minutes., to loosen the gluten of the flour.

Then knead the dough well for 10 minutes, cover it with clingfilm and leave at room temperature to proof and double in size. This took me 45 minutes. Then knead the dough and leave it again for 45 minutes under the cling film to proof it. If time allows, repeat the proofing for a third time. If not, we can proceed with shaping the pie.

Immediately before shaping, prepare the filling. For the curd filling: knead the curd, add the sugar, vanilla, egg yolk and starch and mix well.

For the apple filling, peel and thinly slice the apples, drizzle with lemon juice. For the lemon filling, grate the lemon zest, melt the butter, and then add the lemon.

Roll out the dough 0.8 to 1 cm thick and place on a baking tray lined with baking paper. Divide visually into three sectors. Place the cottage cheese filling in the center.

Then roll out some of the remaining dough 0.5 cm thick, cut out a grid with a special roller, carefully place it on the curd filling, press the edges of the grid. If you don't have a roll, you can make a meshing out of strips of pastry.

Prepare the rims. Roll out a thin piece of dough into a rectangle, brush with melted butter, sprinkle with some of the zest and sugar, roll up, then cut it lengthwise in half. Roll each piece with a screw. Repeat the same procedure, but roll out a smaller rectangle. Make 2 bigger and 2 smaller rims.

Place the rims around the edges of the cake.

Sprinkle apples, cinnamon and sugar on remaining sides. Glaze the cake with the egg. I sprinkled some poppy seeds on the sides. So, our cake is ready to bake. Bake it in a preheated 180 degrees oven for 25 minutes. All ovens are different, so the baking time may be less or more. The pie is not tall, so it bakes pretty quickly. Just watch how the pie browns. You can poke it with a toothpick to make sure, if it is dry then the pie is ready.
