  • Onions (large) - 4-5 pcs
  • Leeks - 2-3 pcs
  • Green onions - 2-3 pcs
  • Garlic - 2-3 cloves
  • Wheat flour / Flour (sifted, + 2 tablespoon - addition to onions, you can mix wheat and rye flour if you want) - 350 g
  • Butter - 150 g
  • vegetable oil - 40 g
  • Water - 70 g
  • Spices (salt, pepper, cumin, coriander, whatever you like)...)
  • Cream (I use 38%, you can lower the calories.) - 250 g
  • Cheese mass (for the filling) - 250 g
  • Sugar - 1 tablespoon
  • Hard cheese (grated into the pour) - 150 g
  • Chicken egg (in the stuffing) - 2 units

I'm not an expert in German, of course, but from what I hear from Frau Elsa, you can never have too many onions in this pie... And onion pie (let's call it that way) is a great helper for any housewife. Onion pie can be made with any dough: puff pastry, yeast pastry, kefir, shortbread and even sponge cake. Green or onion, leeks can be used as a filling.

We will cook it on our own dough. Let's prepare the ingredients for the dough. A small lyrical digression: Pies in Russia baked since ancient times. Originally the bread with filling - a pie, prepared only for major holidays, wrapped in dough, all that was "at hand". Over time, pies became symbols of ceremonies - for matchmaking, weddings, christenings and funerals special pies were baked. Today, in many parts of the world, pies with a variety of fillings are an indispensable attribute of national and family holidays.

We put a medium saucepan on the fire, put butter, salt, sugar (plain or brown), pour the vegetable oil and water.

Turn the heat constantly, stirring until the mixture becomes homogeneous...

Add all the sifted flour at once

and while stirring intensely,

don't stop,

until we obtain a homogeneous, thick dough.

The dough can be poured into a cake tin at once, pierce it with a fork.

And send it into an oven heated to 200 degrees for 10-15 minutes.

While the crust is cooking, let's make the filling. As the pie is onion, this is the most unpleasant part of this overture. But, really, it is made up for later by the taste. ♪ Slice the onions in half rings ♪.

Leeks in rings, about a centimeter thick. A little lyrical digression... The filling can be made with pieces of boiled chicken, smoked bacon, cheese, olives and anchovies, herring and boiled eggs, apples and walnuts, peanuts and roasted mushrooms, potatoes, herbs....

Start frying an ordinary onion, bring it to readiness, add leeks and garlic, and spice it up. A small lyrical digression... Spices added to onions can instantly change the taste of the dish: cumin will add a piquant note, red paprika - spiciness, grated horseradish will enhance the flavor, black or cayenne pepper will tint the onion smell.

Now let's prepare the ingredients for the sauce.

Mix in a suitable bowl,

add the onion mixture

and pour it on top of the ready, slightly cooled cake.

A little green onion on top.

In the oven again for 25-30 minutes at 190 degrees.
