I consider this pie to be "grown up" of desserts as it is often enjoyed by adults. I saw this amazing recipe in Jamie Oliver's book. It's already a favorite treat of all our friends. I have to be honest, it's not a budget-friendly pie, and you can't find the ingredients for it everywhere. But you can adapt it to your liking. For example, you can replace ricotta and mascarpone with more affordable curd cheeses, vanilla pods with essence or vanilla bean, and bitter chocolate with milk chocolate. I'm presenting the classic version. There is some magic in it, the taste is really amazing. I advise you to try cooking the cake in this way, you will not regret it! The cooking time is specified without taking into account baking, cooling the dough and freezing the cake.

Dough

  • Butter - 250 g
  • Powdered sugar - 200 g
  • Wheat flour / Flour - 500 g
  • Chicken egg - 4 pcs
  • Lemon (peel will be needed) - 1 pc
  • Milk - 4 tablespoon
  • Vanilla (pod) - 1 pc
  • Salt (bean)

Stuffing

  • Ricotta - 250 g
  • Mascarpone - 250 g
  • Powdered sugar (and some more for sprinkles) - 120 g
  • Chicken egg - 3 units
  • Orange (peel will be needed) - 3 pcs
  • Dark chocolate (70% cocoa content is better) - 100 g
  • Vanilla (pods) - 2 pcs

This is what the shortcrust pastry set looks like.

Prepare all the products. Separate the egg whites from the yolks. We don't need any egg whites. We freeze them or leave in the fridge for a low-calorie omelet for breakfast.

We need lemon zest. I peel it on a fine grater. It is important to peel only the top yellow layer, the white will be bitter.

Take the seeds out of the vanilla pod. To do this, cut the pod lengthwise, and then use a knife to sort of "clean out" the seeds from the inside. I never throw the seeds away. They can be put in a jar of sugar to flavor it, or added to a pot of custard, pudding, jam, compote, mulled wine, etc. п. (anything where the pod can be picked up and pulled out later).

Mix chopped softened butter, powdered sugar and salt.

Rub the flour, yolks, zest and vanilla seeds into the butter. When the dough resembles coarse crumbs, add cold milk. You can replace it with water, if you wish. The amount of milk I use varies from two to six tablespoons each time. It takes a little while for the dough , but still be crumbly.

Roll the dough into a ball. It should be noted that you need to knead it as little as possible, otherwise it will lose its crumbliness. The aroma at the moment the dough is kneaded is amazing, and I can't even begin to describe it when it's baked!

Flatten the dough to form a loaf like this, thick and short. Wrap it in cling film and leave in the fridge for at least an hour. This shortbread dough is delicious! It can be used for other pies.

Cut the dough into thin slices. Using these slices, line the cake pan with the pastry, then press lightly to make a uniform layer of pastry.

Cut off the projecting edges with a sharp knife and put the pastry in the freezer for at least an hour.

Now let's make the decorations. You can cut the rest of the dough into strips and decorate the pie with them, but this time I cut stars out of the dough. We send them to the fridge. Even after that the dough remains. I freeze it and later use it for cookies or pie.

Bake the frozen crust in a preheated 180 degrees oven for 10-12 minutes. It should lightly brown. A well-frozen cake can also be baked without beans as a load.

Prepare the filling. Here's what we'll need.

Peel the zest from the oranges. Take out the vanilla seeds.

Separate the whites and yolks of two eggs. One egg is left for the coating.

Chop the chocolate into small pieces.

Mix ricotta, mascarpone, powdered sugar, zest, vanilla seeds and egg yolks into a smooth paste.

Whisk the egg whites to a stiff froth that doesn't fall out when you flip them.

Gently mix the whites with the basic mixture. I do this in two steps, shifting the mass from top to bottom.

Pour the filling into the cooled cake. Flatten.

Sprinkle with chopped chocolate. Place the decorations. Grease the stars with beaten egg and sprinkle with powdered sugar. Bake at 170 degrees for 45-60 minutes.
