Ossetian pies with cheese and cottage cheese

Nutritional Value

Another recipe for cottage cheese and cheese pies. Last year when I was picking up my daughter from the sea from her grandmother, I bought a Four Cheeses Ossetian pie on the train in Krasnodar. I thought that I would only eat a slice because. к. But this pie felt light enough, as for a yeast dough pie with cheese. My daughter and I snatched three slices each and brought two to my dad. And this pie is delicious both warm and cold. I recently came across a recipe for these pies on the Internet. They can be made with anything. With cheese, with cabbage, with meat, with chicken, with mushrooms, with spinach. There are also sweet variants: with apple, with pumpkin, etc. п. In short, there are various stuffings, just like Ukrainian dumplings! I've found a variant of the stuffing that is similar to what I used to eat. Plus I'm a cheese fiend, and in the fridge there was some cottage cheese, suluguni, and bryndza. What's there to talk about? Help yourself!

How to cook Ossetian Cheese and Cheese Cake step by step with photos

Т. к. My daughter is at her grandma's and my husband and I are watching our weight, I only made two pies that were 25 centimeters in diameter. If you have a large family or just cook for a large group, then the number of ingredients I presented increase by 2, or even 3 times. Making the dough. I used a bread maker. Put the ingredients in the order corresponding to the instructions for your oven. My oven loads liquid ingredients first, then dry ingredients. Turn on yeast dough mode.

Cooking dough without an oven. Dilute the yeast in warm milk, add salt and sugar. Pour the flour and knead the dough, then add the sunflower oil. Knead the dough, cover with a towel and leave it to rise in volume for 1-2 hours.

While the dough is being prepared (or cooked in an oven), prepare the filling. Grind cottage cheese with a fork.

Add raw egg and beat until smooth.

Add grated suluguni, feta cheese and freshly ground black pepper. Stir well. Do not add pepper if cooking for children.

Add chopped greens. Stir also. Т. к. brynza and suluguni I had enough salt, I did not salt the stuffing. I advise to try and add more salt to taste if necessary.

In 1.5 hours after the start of the oven - the dough is ready.

I baked two tortillas. But in the comments Fiona001313 advised me that Ossetian flatbread is a cult dish, and an even number of them are baked only for funerals. If I had known, I would have made three or one. Therefore, divide the dough into an odd number of equal parts weighing 100 to 200 grams of dough. Roll out the dough into fairly thick flatbreads. Approximately 7-10 mm thick.

Spread out the filling as a pile.

Bring the edges of the pastry together and press firmly at the top. We obtain a slightly flattened ball.

Turn this ball with the seam side down and roll out to a thin flapjack. It's about 5-7 mm thick.

Make a hole in the middle. This is done to allow steam to escape from the cake during baking so the cake won't puff up on one side and remains flat. Bake in the oven at 180-200 degrees for 15-20 minutes.

Butter the ready cake rather generously and leave under a towel for 5-10 minutes to soften it.

Cut it into 4-8 pieces and enjoy. A small one like mine would be better cut into 4 pieces, but I cut it into 8 for a pretty picture. The beauty of these scones is that they have minimal amounts of dough, and despite the "harmful" for the figure, they are quite light. Swallowed in a jiffy. Bon appetit!!
