Ingredients for Apple & Cream Oven Cake


  • Yeast (fresh) - 50 g
  • Salt - 2 teaspoon
  • Sugar (4 tbsp.l. for the dough and 4 tbsp.l. for the filling) - 8 tablespoon
  • Chicken egg (2 pieces + 2 yolks) - 4 pcs
  • Butter - 50 g
  • Milk - 250 ml
  • Water - 250 ml
  • Vegetable oil - 11 tablespoon
  • Wheat flour / Flour (notional) - 1,5 kg
  • Cream (with a slide) - 3 tablespoon
  • Cinnamon - 1.5 teaspoon
  • Vanilla (or - vanilla sugar) - to taste
  • Apple (1,5-2 kg of sweet) - 1.5 kg

How to cook oven cake with apple cream filling step by step with photos


Dough: For the dough, take a dish that can then be put in a hot oven for a while. Pour in the milk and water, heat it up a little (until "a nice warm"). Dissolve yeast. In a bowl we mix together salt, sugar, vanilla, 2 eggs and 2 egg whites (put 2 yolks in the fridge). Whisk . Add oil and mix thoroughly. Combine the mass with the yeast base. Pour 800 grams of flour into it and mix gently with a spatula until homogeneous consistency. Turn on the oven at the same time. Then we add 200 grams of flour to the dough and begin kneading. Now begins the Lonely Wanderer's wanderings into the unknown realms. Gradually adding flour, kneading the soft dough (as they say among the locals: to the consistency of "earlobe"), until the dough falls away from our hands. It's important to strike a balance between a liquid smudge and a bouncy lump (everyone's ears are different)!). I ended up adding another 500 grams of flour. You have to judge by the quality of it! Then we cover the dish with a lid, wrap it in a towel and put it in the oven, preheated to 180 ºC. Turn off the oven. Leave the pastry for 20-25 minutes. Filling: Meanwhile, wash the apples, peel them and remove the core. Cut apples into large slices and put them in a saucepan. We pour water, add sugar and put on the fire. Note: My apples were sour! 4 tablespoon of sugar didn't seem enough. For sweet apples 2 tablespoons may be enough. Taste! The boiling water should be moderately sweet. After boiling, turn down the heat and simmer the apples for 10 minutes (apples should be soft). Mashed potato the ready apples in a blender (I do not have such attachments - I grinded them through a colander). You can also crush them with a pudding stone). Add 3 tablespoon of cream and 1.5 teaspoon of cinnamon to the apples. Stir. You get approximately what is on the picture. After 25 minutes take the pastry out of the oven. Then put it on the table and close the pastry "set the pastry on a rack". After 5 minutes turn the pastry over and close again "again". When done, put the pastry back in the dish and make a tart mould. Line the baking tray with parchment (I have foil again. I'm out of paper. Because..? ♪ Like a poor man getting married, the night is short ♪!). Sprinkle with flour. Roll out a piece of dough thinly. Shape it into baking pans, leaving a little on the edges. Then "Fill" The pie is filled with a thin layer. Then roll out the second part of the pastry. Fill. I usually have 3 or 4 layers of dough. Turn on the oven.

The last layer of filling is a continuous I don't cover the dough. This time I made a grid. Pinch the edges of the pie (all around) and assemble carefully. Take the egg yolks out of the fridge. Melt butter. Let's cool. Whisk with the yolks. Glaze the cake with this joy and put it in the oven. Bake for 25-35 minutes at 180 - 200 ºC. If your oven is so cool, that it is equipped with an ultra-modern grill - you can send the pie to sunbathe for 5 minutes at the end (until it has a beautiful golden crust).
