The base

  • Pancake - 7 units

  • Milk (250 ml) - 2 glass
  • Sugar (10-12 tablespoons)

How to cook pancake cake "sweetie" step by step with photos


Prepare pancakes to start with. You can take your favorites. I use my favorite recipe. Beat 3 eggs with 3 tablespoons of sugar and pinch salt into a foam, add 1 cup of warm milk, then 1 cup of sifted wheat flour with pinch soda, mix well so that there are no lumps. Then add another 1 cup of warm milk and 3 tablespoons of vegetable oil, mix well and leave to rest for 30 minutes. Whisk well before grilling. It's a good idea to grease the pan with vegetable oil before each pancake. The pancakes are extra soft and velvet... I needed 7 pancakes with a diameter of 17 cm for a 26 cm pie tin.

Spoon each pancake densely with custard and roll up into a tube. I made the cream like this: for 0.5 l of milk- Combine 4 tablespoon of sugar with 3.5 tablespoon of flour, pour 0.5 l of warm milk, mix well. Cook over low heat until it thickens, stirring constantly. Remove from the heat and add any filling. I added 3 pieces of dark chocolate and stirred until it dissolved.

Make mold. I have an old pan without a handle of 26 cm in diameter. I first cover with foil and then top with parchment, which I grease with vegetable oil. Spiralize pancake tubes into mold, but spacing them slightly apart.

Preheat the oven to 200 degrees. Make biscuit dough. Beat 2 eggs with 0.5 cup sugar ( I added 1/4 teaspoon of cinnamon, I love it very much).

Beat until stiff.

Gently add the sifted flour and stir gently until smooth.

Pour over the pancakes with the biscuit dough and flatten. Place in a preheated oven and bake at 200 degrees for 25-30 minutes. Check the readiness by hand: if it is dense, it is enough, if soft, then add another three minutes.

Well in general the baking time depends on the oven and the size of the mold... Let it cool completely in the oven. Take the parchment off the cake and put it on a plate. Then you can decorate as you like or just leave it as is. It's really good that way too. I made homemade condensed milk: For this, I poured the sugar with homemade fatty milk, brought it to a boil. Then turned the heat to a small bubbling heat and bring it to a thickening point. I poured warm condensed milk over the cake and let it soak for 30 minutes.

Before serving, I simply rubbed a piece of milk chocolate on top of the cake with a fine grater...
