Dough

  • Wheat flour / Flour (approximate quantity) - 500 g
  • Butter - 250 g
  • Kefir (sour cream halved with milk) - 100 g
  • Leavening agent - 0.5 teaspoon
  • Salt - 0.5 teaspoon
  • Sugar - 1 teaspoon
  • Eggs - 1 pc

Holiday stuffing

  • Chicken (fillet or boneless leg) - 500 g
  • Onions (medium) - 2 pcs
  • Champignons - 250 g
  • Potatoes (medium) - 1 pc
  • Vegetable oil (for frying) - 2 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Bacon - 50 g

Weekday stuffing

  • White cabbage / Cabbage - 1 kg
  • Onion (medium) - 1 pc
  • Carrots (medium) - 1 pc
  • Chicken egg (С1) - 4 pcs
  • Vegetable oil - 2 tablespoon
  • Butter - 1 tablespoon

Filling

  • Egg yolk - 1 pc
  • Milk - 1 tablepoon
  • Seeds (for crumbles) - 1 handful.

How to cook cake for holidays and weekdays step by step with photos


All ingredients need to be cold to make the dough. Quickly and gently knead the flour sifted with the baking powder, salt and sugar into a crumb with the butter. When preparing chopped dough with a combine, you need to beat all the ingredients with a metal knife into a fine buttery crumbs.

Make a depression in the middle of the flour mixture, beat a chicken egg, pour cold kefir (or sour cream, diluted with water or milk).

Knead the dough. There is no need to achieve a special smoothness and homogeneity by kneading the dough for a long time, it is enough to form a blank of dough with your hands, so that it comes together in one lump. If using very dry flour, extra liquid may be added! Put the ready dough in the refrigerator for half an hour or in the freezer for about 10 minutes. This dough keeps well for a few days in the refrigerator or a couple of months in the freezer.

To prepare the "festive" To prepare the filling, cut the chicken flesh into strips or shreds and use the fillet when lightly frosted. Quickly fry until softened and heated in a frying pan with oil. Taste and season with salt and freshly ground pepper. Place on a plate.

Slice the bacon into random pieces, pan-fry until crispy and fluffy, then transfer to a plate.

In the same frying pan, quickly fry onion and mushrooms (chopped at random), lightly salt.

Peel medium potatoes, cut them in cubes or slices, fry quickly in vegetable oil, salt lightly. If you don't like potatoes in the filling, skip this step.

Divide the dough into pieces in a 1/3 to 2/3 ratio. Roll out the larger piece of dough into a sheet the size of the diameter of the tin (24 or 26 cm) + the height of the sides of the tin, and line the tin with it.

Mix the fillet, onion, mushrooms, bacon, potatoes and chill until puffed. Place in the dish.

Cut out the upper layer according to the size of the form, cover the pie, make the skirting. Decorate the top to your liking. Make slits to allow steam to escape.

Grease top of cake with yolk, diluted milk or cream, sprinkle with seeds, sesame seeds on top. Bake the pie in preheated oven up to 180 C for about 40-60 minutes until it is ready (test on a dry splinter).

To prepare "everyday" stuffing chop the onion finely, fry it in a mixture of sunflower and butter (1:1), then add the grated carrot to the onion, continue frying for a few minutes more. Salt the sliced cabbage, crimp with your hands and continue stewing with the vegetables, if using "winter" Add water or broth while braising, if using winter vegetables. Place the ready stuffing on a colander to get rid of excess liquid. Boil 4-5 chicken eggs, chop, add to the cabbage, season to taste by adding salt and pepper, stir. Use as a pie filling.
