This is the kind of gorgeous heritage that many people are returning to now. And it's good that there are people who adapt the production scale for home baking. And what can I say about the pies, they are a must bake: surprisingly delicate, weightless dough, the crust is thin.. Airy pastry, any kind of filling - meat or sweet - your choice. I don't know about you, but I make sure to bake pies for Easter, and this recipe hasn't let me down yet.

Ingredients for muffin tarts with green onions and egg:


Broth

  • Wheat flour / Flour (в.с. "Uvelka") - 225 g
  • Water (warm) - 200 ml
  • Yeast (dry Saf-Moment, pressed 7g) - 2 g

Dough

  • Wheat flour / Flour (в.с. "Uvelka") - 415 g
  • Sugar - 45 g
  • Butter - 69 g
  • Chicken egg - 69 g
  • Salt - 8 g
  • Stuffed pastry (all)
  • Yeast (dry Saph-Moment, pressed 12 gr) - 4 g
  • Water - 60-100 ml

Stuffing

  • Green onions - 150 g
  • Chicken egg - 3 pcs
  • Butter - 15 g

Kettle: Sift flour, add yeast, warm water, knead. The dough is quite stiff. Cover and leave to ferment for 2,5-3 hours at 28-30 degrees. In the recipe, all the yeast is in the sourdough, but I did it by Luda's recommendation: put a third of it in sourdough and the rest in the dough.

After 3 hours, this is what the batter looks like, with a nice fruity smell

Dough: put the starter in the mixer bowl with all the ingredients for kneading the dough except the butter. Knead for 3 minutes. knead for 3 minutes on speed 1, 3-4 minutes on maximum speed.

At the end of the kneading time add soft butter. Knead the dough until smooth.

Form the dough into a ball, place it in a bowl greased with vegetable oil, let it ferment for 2 hours

Turn the dough in two rounds after 40 and 40 minutes.

Dough after 2 hours.

Divide fermented dough into equal portions. I made 45g patties, so 24 patties came out. Round, roll into balls, let rest for 10-15 minutes.

Roll balls into flapjacks, spread stuffing, pinch. First, make the middle, then the edges. This makes a puff pastry. Filling according to Gosta 20-25 grams.

Spread out the patties on a baking tray, cover with flour-dusted cling film and leave to rise for 40 minutes. Brush with egg and salt. Bake in a preheated 180 degrees.

Topping: boil water, add salt and dip the egg in the boiling water, bring to the boil, remove from heat. Cover the pan with a lid and leave for 6 minutes. Drain boiling water, pour cold water on eggs. An egg cooked this way is very tasty, the white is very tender. Finely chop the onions, salt and grate in your hands, Add finely chopped egg, butter. Stir.

Slice

The pies are tender, fluffy and very tasty. I had 2 fillings, so I coated one batch with egg yolk and salt, the other with egg white and salt.
