Ingredients for Pear and Apple Pie "duet":

For yogurt

  • Sourdough starter (3g - for yogurt from "Augsika") - 1 sachet.
  • Milk (% fat. any I have 3.2% fat.) - 1 l


  • Wheat flour / Flour - 140 g
  • Butter (or creamy margarine) - 70 g
  • Dough leavening agent (b/g) - 1 teaspoon
  • Sugar - 80 g
  • Yogurt - 70 ml
  • Egg yolk (large) - 1 pc
  • Vanilla sugar - 1 sachet.
  • Salt (fine) - 1 pinch.
  • Bread crumbs / breadcrumbs (for molding) - 1 teaspoon


  • Butter - 20 g
  • Sugar - 1 tablespoon
  • Pear (large) - 1 pc
  • Apple (large) - 1 pc
  • jam (or berry jam, red - pureed) - 2 teaspoon
  • Peanuts (peeled or walnuts) - 1/3 glass
  • Cinnamon (I have a mix of "cinnamon and sugar" - 2 teaspoon) - 1 teaspoon
  • Starch (any) - 1 teaspoon


  • Powdered sugar - to taste
  • Grapes (small and seedless) - 1 handful.

How to cook pear and apple pie "duo" step by step with photos

1. Sterilize the yogurt containers. Pour the yeast into a gallon jug with milk, of any fat content, at room temperature. Stir the milk mixture thoroughly with a clean, dry spoon for 2-3 minutes until the sourdough has dissolved.

2. Then close the liter container with the lid. Pour water at 100 C into a thermos until it reaches the specified temperature. Submerge the container with the mixture into the thermos. Close the lid. Leave it in a warm place for 6-10 hours for fermentation. Then take out of the thermos a liter container with yogurt and cool. Yogurt is ready!

3. Let's prepare the dough. Mix melted butter with sugar and vanilla sugar.

4. Add yogurt to butter mixture.

5. Then add egg yolk and beat with a whisk.

6. Mix the flour with baking powder and fine salt and sift through a sieve.

7. In small portions, mix the flour mixture into the butter mixture. Form a thick, smooth dough. The spoon is dripping with difficulty. If the dough is very thick, add 1-2 tablespoon of yogurt. Cover bowl with clingfilm and set aside for 30 minutes.

8. Prepare filling. Roast nuts in a dry pan. Put cooled nuts in a sachet and crush with a rolling pin. Grind according to your taste.

9. Peel and core off pear and apple and cut into small cubes. Melt the butter (20 g) and mix with the sugar (1 tablespoon). Add chopped fruit, red jam (or marmalade), cinnamon and sugar to butter mixture and stew for 2-3 minutes.

10. Then add starch, stir and stew for 1 minute until desired thickness. Stuffing is ready!

11. Grease a baking dish (F18) with butter and sprinkle with breadcrumbs.

12. Spread out 1/2 of the pastry and spread out evenly with a silicone spatula.

13. Put 1/2 of the fruit filling on the pastry.

14. Sprinkle the fruit with chopped nuts (1/2 part).

15. Place the second part of the pastry and the filling on the nuts. Decorate with small grapes and sprinkle with remaining nuts.

16. Send the pie pastry to a preheated to 175 C oven and bake until crispy, about 30-35 minutes. Check if the pie is ready after 30 minutes with a dry spoon.

17. Sprinkle the cake, baked and slightly cooled, with powdered sugar.
