Tart from my favorite "timeless" or "Khrushchev" dough. It makes a delightful pastry with a thin, crispy, ruddy crust. The filling of chickpeas, green peas, golden onions and herbs is not only tender and tasty but also contains proteins, fats and carbohydrates we need.

Ingredients for chickpea pie, green peas and greens:


Dough

  • Salt - 0.5 teaspoon
  • Yeast (dry) - 2 teaspoon
  • Sugar - 2 tablespoon
  • Milk (warm) - 1 glass
  • Butter - 120 g
  • Wheat flour / Flour - 3,5 glass

Stuffing

  • Chickpeas ("Mistral") - 150 g
  • Peas (green "Mistral") - 150 g
  • Salt - 1.5 teaspoon
  • Onions - 2 pcs
  • Parsley - 1 bunch.
  • Dill - 0.5 pooch.

Chickpeas "Mistral" Rinse a few times.

Pour water over them and let them swell overnight or at least 4 hours.

Pour water over chickpeas and salt to taste. Boil until ready (about 1.5-2 hours, depending on how many hours it was soaked). Drain the water.

Green peas "Mistral" Rinse well.

Pour water and leave for overnight (or at least 2 hours) to swell.

Drain the water, pour fresh water over peas, salt to taste. Cook for 20-50 min. until they are ready.

Combine green peas, chickpeas and onions sauteed in vegetable oil. Beat with a blender until smooth. Add chopped greens (parsley, dill).

Stir. The pie filling is ready.

Prepare dough. Rub yeast and salt together, add warm milk and sugar and mix. Melt butter (in the microwave), add to the main mass. Mix. Pour the mixture into the baking machine. Add sifted flour and turn on "Dough". If making by hand, do everything in the same sequence. Add the flour in several steps. First knead with a spoon, then with your hands. The dough kneads quickly - it becomes very elastic, soft but not heavy. Remove the dough from the bowl of the bread maker. Place in a plastic sachet and leave in the fridge for 4 hours.

Turn out the dough on a work surface and crumple with your hands. Divide into 2 parts, cover with a napkin. Roll out one part of the dough into a circle about 1.5 cm thick.

Spread the filling.

Roll out the 2nd part of the dough. Cut out a circle, the diameter of which will be 3-4 cm larger than the first one.

Place the filling on this piece of dough.

Fold in the edges. Grease the cake with a mixture of egg, 1 teaspoon sugar and 1 tablespoon water. Bake without proofing in a preheated 180g oven until golden.

15 minutes. Before the cake is ready let's make the decorations. Divide rest of cake into 3 parts. Add green food coloring (optional). Adjust the quantity so that each piece has a different shade of color.

Roll out the dough thinly and cut out the leaves with a spatula. I cut out the rest with a knife.

Take the cake out quickly, smear it with a mixture of egg, sugar and water, with which you smeared it before baking, and, like glue, begin to glue the decorations. It has to be done very quickly. Bake for another 5 minutes in the oven. As soon as the crust is lightly browned, remove it. The dough for the decoration is very thin, so it bakes quickly. Enjoy!!!
