  • Potatoes - 500 g
  • Yeast - 2 teaspoon
  • Water - 150 ml
  • Vegetable oil - 100 ml
  • Chicken egg (1 egg in batter, egg yolk for greasing. rest to sauce) - 4 pcs
  • Pearl grits (TM "Mistral") - 3/4 glass
  • Sour cream - 200 g
  • Soy sauce - 1 tablespoon
  • Butter - 20 g
  • Chicken liver - 250 g
  • Onions - 2 pcs
  • Wheat flour / Flour - 2 glass
  • Sugar - 1 teaspoon
  • Potato starch - 2 tablespoon
  • Dill - 4 sprigs.
  • Salt - 2 teaspoon
  • Black pepper - 0.5 teaspoon

How to cook pearl barley and chicken liver pie step by step with photos

Boil the pearl barley according to package directions.

Rinse and peel potatoes and mince through a meat grinder. Add flour and 1 teaspoon salt.

Mix with egg, 100 ml vegetable oil, pepper to taste.

In warm water with sugar dissolve yeast, let it come up in warm place until it becomes foamy. Pour into potato mixture and stir.

Turn out the dough onto a lightly floured board and knead into a lump. Allow to proof while preparing the filling.

Finely chop onion and fry in butter until transparent.

Finely chop liver and add to onion. Fry over low heat, stirring, for about 5 minutes.

Add soy sauce to liver and simmer until liver is cooked for a minute or two.

Then add liver to barley, season with salt and pepper.

Meanwhile, the dough comes up. Tear off a small piece of dough for decoration.

Line a baking tray with parchment and grease it. On one side make the paper larger, over the edge, so that it is easier to remove the finished pie from the baking tray to a dish. Spread out the pastry and sprinkle with starch.

Now spread the pearl millet filling, pressing it into the dough, lifting the sides. You can make the rims as you place the pastry on the baking tray.

For the sauce: mix sour cream, two eggs and an egg white. Egg yolk is left for the grease. If the eggs are small, add another egg. Taste and season with salt and pepper. Stir.

Pour sour cream sauce over the pearl millet filling.

Sprinkle finely chopped dill on top.

Use leftover dough to decorate the pie. You can do it without. Add a tablespoon of water to the egg yolk and glaze the pastry on top. Pour the rest of the dough on top of the sauce.

Bake the cake in an oven heated to 180°C for about 30-35 minutes, do not brown it, so that the sauce remains light. The pastry bakes quickly, check it with a wooden stick. The pie is big. You can cut it in half. Serve the cake warm with sour cream. Warm the cake while it cools in the microwave.
