Dear cooks, here is a recipe for an insanely delicious pie that is made in the Plitvice Lakes region of former Yugoslavia. Now it is a national park in Croatia, a beautiful place where local women can make wonders with the dough. By the way, this place may seem familiar to us who grew up in the Soviet Union, we've seen it in the movies - they made famous movies there "about Indians" starring Gojko Mitic. Dedicated to the idol of my childhood...

Ingredients for Plitvice Cake:


Dough

  • Wheat flour / Flour - 500 g
  • Yeast - 7 g
  • Leaven - 1 teaspoon
  • Sugar - 1 tablespoon
  • Salt - 1 pinch.
  • Sour cream (or white yogurt) - 180 g
  • Chicken egg - 1 pc
  • Sunflower oil - 100 ml
  • Milk - 100 ml

Poppy filling

  • Poppy (ground) - 300 g
  • Milk - 300 ml
  • Sugar - 150 g
  • Vanilla sugar - 20 g
  • Raisins - 50 g
  • Rum - 2 tablespoon

Cheese filling

  • Cottage cheese - 250 g
  • Chicken egg - 1 pc
  • Sugar - 75 g
  • Vanilla sugar - 10 g
  • Lingonberry (dried) - 50 g
  • Rum - 2 tablespoon
  • Semolina - 2 tablespoon

Optional

  • Powdered sugar (for decoration)
  • Sunflower oil (to grease the cake) - 2 tablespoon
  • Water (for greasing the pie) - 2 tablespoon

How to cook Plitvice pie step by step with photos


First make the filling. Raisins and cranberries wash in hot water, put separately in bowls and pour rum. Instead of rum you can use brandy, liqueur or berry liqueur.

Pour the ground poppy seeds (I pounded with a coffee grinder) into a saucepan, pour milk and, stirring all the time, simmer on a low heat until it thickens, which will happen almost immediately. Pour the sugar, vanilla sugar and cook until the liquid boils off, at the end add the raisins together with the rum, also add here the rum from the cranberries, cook a little more. The whole procedure takes about 15 minutes. The main thing is to stir it thoroughly all the time. Let the mixture cool in its final state. To save time you can prepare it beforehand.

Mix the cottage cheese with the sugar, vanilla sugar, semolina and eggs. Add cranberries, stir. Taste for sugar; may need to add more to taste.

Sift flour and mix with baking powder, yeast, sugar and salt.

Add egg and sour cream. Stir with a spoon.

Add light sunflower oil and warm milk. Knead the dough. Stir in a little milk as needed. Place in a warm place for about 45 minutes.

Roll out the soft dough into a large rectangle when it has risen. If it turns out, as I did, crooked, that's okay. Mentally divide it into 4 equal parts and use a knife to easily mark the borders (do not cut through the dough). To make it easier to transfer the pie to the baking tray, it's better to roll out the dough at once on baking paper.

On the two middle strips, place the poppy seed filling. Try to stack the filling closer to the center line, but so that there is space left over.

Place one loose end of the dough over both strips of poppyseed filling.

Place the cottage cheese filling in the hole in the middle. This is best done with a cellophane sachet with the corner cut off.

Now put the other end of the dough from the other side through the filling. Unfortunately, I don't have a picture of it, but I think it's pretty clear. We kind of close the loose end of the dough on top of the stuffing and fasten the dough, so the resulting roll does not unroll. Fold the ends on the bottom and top.

Transfer the cake to a baking tray lined with baking paper (if you haven't already unrolled the pastry on the paper). Allow it to proof for 15 minutes. Brush the cake with sunflower oil, and then with water. Bake the cake in a preheated oven at 180 degrees for 20-30 minutes.

Let the ready cake cool and sprinkle with powdered sugar. It's a dream with tea or milk!
