Ingredients for poppy seed dumplings:

  • Wheat flour / Flour - 2.5 glass
  • Sugar - 400 g
  • Chicken egg - 7 pcs
  • Starch - 7 tablespoon
  • Sour cream - 200 g
  • Mac - 400 g
  • Food grade ammonium - 2,5 tablespoon
  • Vegetable oil (for greasing) - 2 tablespoon
  • Condensed milk (boiled, for cream) - 1 jar.
  • Butter (for cream) - 300 g
  • Dark chocolate (for the glaze) - 1 package.
  • Milk (for the frosting) - 5 - 7 tablespoon
  • Confectionery sprinkles (for decoration) - 1 sachet.

How to cook poppy seed dumplings step by step with photos

This dumpling consists of two layers and a cream - a sponge cake, a poppy seed layer and a butter cream layer. So, let's start with the sponge cake, which consists of white and yellow dough. White batter: beat 4 whites with 150g of sugar; mix 3 tablespoon flour, 3 tablespoon starch, 1 tablespoon ammonium; Introduce the flour into the egg mixture;

Yellow dough: Beat 4 yolks with 50g sugar; Mix 4 tablespoon flour, 1 tablespoon starch, 1 tablespoon ammonium; Add flour to the egg mixture.

Line a baking sheet with baking paper, brush it with butter, spread the pastry out evenly and gently: first the yellow pastry, then the white one. Bake at 200 degrees for about 15-20 minutes.

Prepare the poppy seed cake: Sift the poppy seeds (400g), pour boiling water for half an hour, drain the water, squeeze the poppy seeds.

Beat 2 eggs with 200g of sugar, add sour cream (200g) with 0.5 tablespoon of ammonium dissolved in it. Stir. Add the flour, mix, add to the poppy seed, mix thoroughly again. I make it all with a mixer - it's faster.

An important point is that in Western Ukraine many people use ammonium as a leavening agent for baking. Baking becomes airy, light and odorless, although ammonium itself has an unpleasant smell of ammonia. I have tried baking with other leavening agents, with the same baking soda - a completely different dough, a completely different taste.

Spread the poppy seed dough on a buttered baking sheet. Bake at 200 degrees for about 35-45 minutes.

Creamy cream: whip 1 can of condensed milk and 300g of butter. Chill.

Let the cake cool. Then preferably line them up with each other, so that the dumpling is formed in this order: poppy seed cake at the bottom, cream cream on it (the layer is thick, about 1-2 cm thick), on cream - sponge cake, white dough on cream.

Make chocolate glaze (I melt chocolate in a water bath, adding a little milk), cover the top of the cake with glaze. Before the frosting hardens, sprinkle with sprinkles. Options for topping: drizzle with remaining cream, sprinkle with sprinkles or grated chocolate, or chopped waffles, or coconut.

The dumplings turn out quite large, you can make half a recipe if you have a smaller mold. It needs to be chilled before serving, so that the cream is solidified. Very tasty! Believe it or not! :)
