Ingredients for Poppy Pear Pies:


Dough

  • Wheat flour / Flour - 400 g
  • Water - 250 ml
  • Sugar - 2 tablespoon
  • Salt - 1 pinch.
  • Vegetable oil - 2 tablespoon
  • Poppy - 2 tablespoon
  • Vanillin (1,5 g) - 1 sachet.
  • Yeast (dry instant) - 1 teaspoon

Filling

  • Pear - 500 g
  • Brown sugar - 2 tablespoon
  • Cognac - 2 tablespoon
  • Butter - 30 g
  • Nutmeg - 1 pinch.
  • Cinnamon - 1 pinch.
  • Ginger - 1 pinch.

Extras

  • Wheat flour / Flour
  • Vegetable oil
  • Powdered sugar

How to cook poppy seed cakes with pear step by step with photos


You do NOT need to soak the poppy seeds beforehand. Sift flour. Mix all ingredients for the dough. Do not add all the flour at once, you may need a little less or, on the contrary, you may need to add a little. Knead the dough.

The dough is soft without being hard. "Stuffing" no need to stuff it with flour. Place the dough in a bowl greased with vegetable oil, cover with clingfilm and leave for 45-50 minutes in a warm place to rise.

While the dough is maturing, prepare the filling. Peel pears, cut them into medium sized pieces. Take not too soft pears for stuffing, otherwise after being cooked the stuffing will turn into pear puree. The weight given is 500g of already peeled fruit. Fill the pears with cognac for about 10 minutes.

Melt the butter in a pan and add the pears in the cognac. Stir in . Cook over medium heat for about 2 minutes.

Stir in brown sugar and let the pears cook for another 5 minutes until the brown sugar has dissolved. (If you don't have any brown sugar, you can use the regular white sugar)

Add the dried ginger, cinnamon and nutmeg. Naturally, all the spices are optional.

Cook the filling for another 5-7 minutes. During this time, the pear will become soft, but will not turn into mush, and the syrup will thicken. Take the stuffing off the fire and cool completely.

During this time the dough has risen.

Spread it on a floured work surface, crumple it and divide into 10-11 equal pieces. (65-70 grams )

Roll out a tortilla from each piece. (10-11 cm in diameter)

Place the pear filling in the center of the cake. (1-1,5 teaspoon)

Pinch the edges together, press thoroughly to form a patty. Then raise both ends of the cake and pin it together.

Place the patties on a baking tray lined with baking paper, spaced apart. (grease paper with vegetable oil) Cover the patties with a linen towel and let them rest for 15-20 minutes.

After 15 minutes. Bake the patties in a preheated 180° oven for 20-25 minutes. (use your oven as a guide)

When ready cool slightly. Sprinkle with powdered sugar. All done! If you omit the butter and cognac from the filling you get great Lenten pies.
