Ingredients for poppy seed cake with apples:

  • Wheat Flour / Flour (dough) - 400 g
  • Brown sugar (75 g - dough + 2 tbsp.l. in the filling and + 2 tbsp.l. for sprinkling the pie)
  • Butter (dough) - 50 g
  • Milk (225 ml for dough, 100 ml for steaming poppy seeds) - 325 ml
  • Chicken egg (batter + yolk to grease the cake surface) - 2 units
  • Yeast (dry, dough) - 6 g
  • Salt (dough) - 0.5 teaspoon
  • Apple (sour apple - antonovka, semirenko, stuffing) - 2-3 pcs
  • Poppy (stuffing) - 50 g
  • Raisins (or dried apricots. Stuffing) - 50 g
  • Walnuts (stuffing) - 50 g
  • Cognac (or rum, stuffing) - 3 tablespoon

How to cook poppy seed cake with apples step by step with photos

It's raining outside, my mood is low, and I don't even want to look out of the window, so we go to the kitchen and get some cooking therapy. We're going to make a pie. ♪ We'll start by steaming the poppy seeds ♪. Boil some milk and pour the poppy seeds for at least 30 minutes.

Open a bottle of cognac and... Pour the raisins, or in my case, the dried apricots. If children will eat the cake, do not open the bottle, do not pour raisins - why do we need drunken children??)) In this case, you can fill raisins with juice or just warm water.

Let's proceed with the dough. Sift the flour. It is desirable to sift it three times. We are going to make muffins, and thanks to well sifted flour, the dough will be fluffy and tender. We divide the flour into two parts, add warm milk and yeast to one half, mix until homogeneous, cover with a napkin and put the dough to rise in a warm place for half an hour.

Drain the milk from the poppy seeds, pour in the brown sugar, and grind it thoroughly in a mortar.

Meanwhile, the batter has doubled in size. Take out, add eggs, sugar, and room temperature butter, and knead for 5-7 minutes. The dough will be sticky to your hands, but do not block it with flour; after rising, it is better to knead it on the table, sprinkling the flour little by little. You can knead in the bread machine. Cover the bowl with a cloth and put it in a warm place for an hour. The dough should double in volume during this time.

Now it is the turn of the filling. The nuts can be crushed in the ѕachet with a rolling pin. Add the nuts and apricots to the poppy seeds and mix together.

Peel and core the apples, cut them into wedges. Drizzle with lemon juice to prevent apples from turning black.

When the dough has risen, divide it into six equal portions, roll out each portion into a 5x20 cm rectangle and arrange the filling, roll up into a tube and seal the ends. Roll up the resulting sausage in a snail, laying it with apple slices.

Put the snails in a greased form, dusted with flour, brush with egg yolk and sprinkle with brown sugar. I had originally planned to use all six rolls in the pie. Then I changed my mind and baked one roll as a bun with another filling, and put an apple inside the pie.

Bake the pie for 45 minutes at 180 degrees.

Let cool slightly, then take out of the mold. Slice and enjoy.
