The dough is soft and tender with a base of yogurt and beer, the stuffing is from what we didn't finish the night before at dinner )))) Any filling you like, in this case the dough deserves a big award - incredibly soft, fluffy, with a thin crispy crust on top, and it's a pleasure to work with. It's a universal pastry, you can make the filling sweet, and if you roll it into a thin layer, it makes a great strudel, like a meat, nut or apple strudel ))))

Dough

  • Chicken Egg - 1 pc
  • Yogurt - 100 g
  • Light beer / Beer - 100 ml
  • Soda - 1/3 teaspoon
  • Dough leavening agent - 0.5 teaspoon
  • Wheat flour / Flour - 3-4 glass
  • Salt - to taste
  • Sugar - 1 teaspoon
  • Butter - 150 g

Stuffing

  • Potatoes (boiled, 8-10 small or 3-4 medium) - 8-10 pcs
  • Onions - 1 pc
  • Mushrooms (fried - chives, mushrooms) - 150-200 g
  • Sour cream - 1 tablepoon
  • Hard cheese (suluguni, mozzarella) - 100-120 g
  • Greens (onions, dill, parsley) - to taste
  • Chicken egg - 1 pc

How to cook potato-mushroom pie with cheese step by step with photos


The butter needs to be soft, so take it out of the fridge about 30-40 minutes before making. Add 1/3 teaspoon of baking soda to 100g of yogurt and let stand to react while you do the rest. Start beating the melted butter, you can do everything by hand, you don't have to make a noise with the mixer, especially in the morning when everyone is asleep and you are trying to surprise your loved ones for breakfast )))) Add egg, 1 teaspoon sugar, 1/3 teaspoon salt, mix with a whisk.

Add yogurt with baking soda, this way yogurt gets full reaction under the influence of baking soda and a nice cap rises )) mix it well.

Pour in beer, mix again.

Add 3 cups of sifted flour with baking powder and knead the dough. The dough should be very soft, may even stick to your hands a little. Add more flour if needed. Form the dough into a ball, wrap it in clingfilm and put it in the fridge for 40-60 minutes or longer, even overnight.

The idea here is the dough itself, the filling can be anything - meat, vegetable or even sweet, the dough is versatile. I gathered everything I had in the fridge, sorry, but the leftovers from Friday night dinner ))) I had fried beech mushrooms and onions about 150-200g, 10 little potatoes. I grated suluguni cheese and mozzarella, about 100-120g in all. Whisk 1 egg with a fork, set aside 1 eggpoon to grease the pie. Stir in grated cheese, egg, sour cream, chopped greens, paprika, turmeric, pepper mixture.

Cut potatoes into thin rings.

Roll out the dough into a layer about 0.5 cm thick. I did without rolling pin. I do not like it, the dough is tender and very pleasant to work with, I spread it out with my hands, but immediately on baking paper, so I did not sprinkle with flour, but if you roll it out, the table must necessarily be sprinkled with flour, so that the dough does not stick. The dough should be divided in half, on one half put the potatoes and on top of the cheese mixture.

Place mushrooms on top of the cheese.

Cover with another half of the pastry. To seal edges, brush surface with egg, make a lot of holes with a fork, for steam to escape, so that the cake does not rupture at the seams )))) I don't know what I was thinking, I must have been dreaming, I put the filling exactly in the middle, I left the edges, which I pinned on top, it looked a bit messy, so I had to scrape some dough on top, something like decoration, I was in a hurry, but it's not my specialty, decorating, and stomach will appreciate not external beauty all the same ))))

Bake for about 30-40 minutes at 180 C in a preheated oven. Let the ready cake stand for 5 minutes, then cover with a towel and let stand for another 10-15 minutes.
