Ingredients for potato pies "mousse":


  • Wheat Flour / Flour (I have spelt flour (Dinkel), you can have wheat flour)
  • Yeast - 10-15 g
  • Kefir - 1 glass
  • Vegetable oil (for the dough - 2-3 tbsp.l., for greasing the molds and frying - 2-3 tbsp.l.) - 4-6 tablespoon
  • Seasoning (salt, pepper, you can use bouillon cube )
  • Potatoes (For stuffing 1 - 3 to 4 to 5-6 piece, depends on size of potatoes, For stuffing 2 - 3 to 4 to 5-6 pieces, depending on size ) - 6-12 pcs
  • Butter (in the stuffing) - 2 tablespoon
  • Soup (onion powder - for stuffing 1) - 1/2 package.
  • Sausage (veal liver coarse "grind" - for stuffing 2) - 250-300 g

And by the way, have you noticed AND THAT the refrigerator is not such a simple object like an ice box to store food? No, it's not! For some living creatures - it's just like a magic object, I do not dare to call this achievement of civilization box... For example, for my cat, Sailor Cat, who lived with us in Krivoy Rog in the glorious 80s. We picked him up when he was a baby in the street, he couldn't eat... I pour him some sour cream in a bowl from a doll's set - he gets in with his whole muzzle and front paws there and rides and rides around the kitchen until he eats it all. Then he walks around shaking his paws off... This procedure was repeated several times a day with the subsequent washing of the cat and the whole kitchen! Where did the patience come from?? The cat grew up beautiful and very intelligent (played hide-and-seek with my daughter and always knew very well when he HIDE and when he SEARCH) - he quickly understood where all the delicious things in this house come from, of course, from the fridge. Note: the kitties of that time ate with people: borscht, porridge, sausage, fish, etc. д. If they had told us then that there was special food for cats, we would have laughed our pants off! We always took our cat with us, he travelled with us to the sea on vacation, to friends, to the country... He hated this business (trips) with all the fibers of his cat soul, and, possessing, like all cats, telepathy (because before the trip we did not say about it aloud for fear of scaring him), he was hiding in advance so that it was impossible to find him by usual detective methods. Then we resorted to a ruse (it didn't work the first time) - we opened and closed the fridge a couple of times more loudly... Well, only an iron will can withstand that and not get out of his shack! And while travelling he got the best sorts of salami - back then in Krivoy Rog he had his own meat plant and what was produced there could drive mad not only cats, but us as well.. There we were brutally grabbing it and dragging to the car! So think about it - and what is a refrigerator for you and your family?) Yes, I got carried away again, pardon me, I'm a sinner... Guilty as charged - I admit it!!! To the recipe! The toad who lives in my house and won't let me throw anything away suggested a couple of very ANTI-crisis recipes (from leftovers!), here's one of them... I boiled the yeast in warm water to check for "germination". Then I mix the flour, kefir and yeast into a sourdough, the dough is about the thickness of a sour cream. I always cover the bowl. I cover it up and forget about it... A couple of hours later I looked and saw that it was not just fermenting, but bubbling! And when I can't get my hands on it, I've been feeding the sourdough two or three more times.. "I gave it two or three more times" with flour and kefir... After all, I don't need to knead it "walks around, doesn't touch me! In the end I started the dough, adding a little bit of oil and salt. oil and salt, and flour, to the medium consistency of the dough - it was not tight, but soft and elastic. I left it to ferment overnight - in a magic box, I mean, in the fridge. It rose so well!

I made the stuffing this way - I boiled the peeled potatoes in water, spiced them up, and pounded with butter with a meat grinder. For stuffing 1 - I added half a packet of onion soup - I can't throw it away! For stuffing 2 - sausage, which we won't have time to eat because of the huge amount of cheese we bought the day before in France - these are the delicacies we should have eaten in the first place. Let's cool... To make the pies: dust the surface of the table with flour; spread the pieces of dough with your hands into thin flapjacks; put the filling and seal them.

Cooked in two ways - 1. mold (in this case it is a "scoop" I greased it with butter and baked in the oven after proofing;

- 2. I heated up some fat in a skillet and fried the cakes on a medium heat under a lid

The most important thing is to put the ready patties in a big saucepan and cover them with a lid. The patties will soak in their own perfume and juice - they will be very tender, even though the dough is quite unleavened ("bread"!) and very little fat is used!!! In a word - the fakir's trick was a success! My husband ate nothing but pies for two days! Even though he's a figurehead, he couldn't stop...
