Ingredients for the dumplings with plums:

  • Wheat flour / Flour (+ 2 tablespoon for sprinkles) - 600 g
  • Yeast (dry) - 2 teaspoon
  • Milk (warm) - 300 ml
  • Chicken egg - 2 pcs
  • Butter (+ 20 g for the filling) - 80 g
  • Vegetable oil - 1 tablespoon
  • Vanilla sugar - 1 sachet.
  • Sugar - 5 tablespoon
  • Plum - 300 g
  • Cinnamon (ground) - 1 pinch.
  • Salt - 1 teaspoon

How to cook buns with plums step by step with photos

1. Products for the mixture. Sift flour.

2. Let's prepare the sourdough. Mix dried yeast with 2 tablespoon of flour and 1 tablespoon of sugar. Add warm milk (100 ml) and mix with a whisk. Place a bowl of sourdough in a warm place until a foamy cap appears.

3. To prepare the dough. Melt butter in the microwave and add milk (200 ml), mix. Beat 1.5 chicken eggs (1 yolk is left for greasing the pies) with a whisk with salt and 1 tablespoon of sugar. Pour egg mixture into oil mixture, add foamy starter and mix until smooth.

4. Add flour in small portions to the liquid mixture.

5. Knead the dough.

6. Place the dough on a lightly floured chopping board.

7. Knead the dough smooth and not sticky on your hands.

8. Grease a clean bowl with sunflower oil and put the dough. Cover the bowl with clingfilm and leave to rise 2½ times in a warm place.

9. Prepare stuffing. Remove the seeds and skin from the plums. Leave two plums for decoration. Slice the peeled plums and fill with sugar (3 tablespoon or to taste), stir together. You can add ground cinnamon. Put saucepan with plums on low heat and stir constantly to bring mixture to a boil and dissolve sugar. Keep saucepan on stove for 1 minute and remove from heat.

10. Knead the ready dough and let it rise for 20 minutes (under the foil).

11. Shape the patties. Divide the dough into 12 portions and roll into balls.

12. Roll out each loaf. Sprinkle a little plum filling on them.

13. Roll up each pastry.

14. Stack the rolls. Line a baking tin with baking paper and grease it with oil. Place the rounds and cover with a light towel or a transparent sheet. Leave in a warm place for about 20 minutes or let the rolls double in size.

15. Make a cut (in the middle) on the billets with scissors. Put in the cut a small cold piece of butter, cooked jam and for decoration slices of not peeled plums. Sprinkle sugar on top. Put baking tray with baked products in heated up to 180 C oven for about 30-35 minutes.

16. Then grease pies with beaten up egg yolk and put in oven for 2-3 minutes until pies are crusted over. Sprinkle the finished pies with water and leave to cool under a towel. Bon appetit!
