  • Rice ("Aquatica MIX" from TM "Mistral", in the stuffing) - 100 g
  • Water (for boiling rice) - 220 ml
  • Sausages ("Hunting", stuffing) - 200 g
  • Parsley (in the stuffing and for decoration) - 15 g
  • Salt (in dough - 1 taste in the filling)
  • Garlic (in stuffing) - 2 clove
  • Chicken egg (in the filling - 1 piece; in the dough - 1 piece; for greasing the dough - 1 piece) - 3 pieces
  • Cream (25-30% fat, in the filling) - 60 ml
  • Sun-dried tomatoes (in the stuffing) - 50 g
  • Mozzarella (for sprinkling the stuffing) - 100 g
  • Cream cheese (cottage cheese, for dough) - 150 g
  • Wheat flour / Flour (for dough - 550 g; for dusting - 20 g) - 570 g
  • Yeast (quick-acting dry yeast for dough) - 8 g
  • sugar (in dough) - 2 tablespoon
  • Milk (into the dough) - 250 ml
  • Butter (45 g butter for dough; 30 g butter for greasing the ready pastry) - 75 g
  • vegetable oil (to grease the baking tray) - 1 tablespoon

How to cook Rice Sausage Mozzarella Cakes step by step with photos

Making dough first. I combine milk and cream cheese, knead the cheese a little with a fork, heat a little in the microwave oven.

I knead the dough in the bread maker, but you can also knead it in the regular way. I pour warm milk and cottage cheese into the bucket of the baker, add sifted flour, egg, salt, sugar, yeast, melted butter.

I put the bucket in the baking oven and turn on the mode of kneading the dough. I let the dough increase in volume by 2-3 times.

I prepare stuffing. Rice "Aquatica MIX" Pour it into a pan and add water.

Bring to boil, lower heat and cook rice for about 30 minutes. I let the rice cool down.

I cut hunting sausages in small pieces.

I slice sun-dried tomatoes.

I beat the egg with the cream.

Pour cream and egg into the rice, add salt to taste, chopped parsley greens, sun-dried tomatoes, chopped garlic.

I stir up the stuffing.

When the dough has increased in volume, I spread it out on a table sprinkled with flour, knead it.

For each basket, divide the dough into pieces weighing 50 and 30 grams.

Shape the dough into balls, cover with clingfilm and let them rest for 10-15 minutes.

I roll out a small circle from a piece of dough weighing 50 grams, and from a piece of dough weighing 30 grams I form a roll with one end wrapped several times around the other end.

I lay a rim on a circle of dough.

I spread out the small baskets on a baking tray greased with vegetable oil. I place the rice stuffing in the baskets. I cover the pieces with cling film and give them to increase in volume about 2 times.

I glaze the dough with beaten egg.

Sprinkle stuffing with grated cheese.

Lay slices of sliced sausages on stuffing.

I bake the baskets in preheated oven up to 190 degrees about 18-20 minutes until crusty. Remove the pastry from the oven and brush with melted butter, garnish with parsley greens. Enjoy!!
