Ingredients for the roll cake with stuffing:


Dough

  • Wheat flour / Flour - 370 g
  • Milk (warm) - 210 ml
  • Yeast (with a small slide) - 1 teaspoon
  • Sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Butter (soft, TM " Milier") - 50 g
  • Vegetable oil - 2 tablespoon

Stuffing

  • Ground meat - 200 g
  • Mushrooms - 100 g
  • Onions - 1 pc
  • Carrots (medium) - 1 pc
  • Sweet pepper - 0.5 pc
  • Seasoning (for meat) - 1 teaspoon
  • Vegetable oil - 2 tablespoon
  • Butter (TM "Milier") - 1 tablespoon
  • Egg white - 1unit
  • Salt - to taste
  • Garlic - 2 clove

Optional

  • Egg yolk (+1 tablespoon milk+1 pinch. sugar) - 1 pc
  • clarified butter (TM "Millet" - for greasing baked pies) - 1 tablespoon

How to cook roll cake with filling step by step with photos


1. Prepare the sourdough for the cake. Mix in warm milk (100 ml), 1 tablespoon flour, 1 tablespoon sugar and 1 teaspoon yeast. Put the sourdough in a warm place for the formation of a foamy cap.

2. Prepare filling for the rolls. Peel and chop the vegetables.

3. Sauté onion in vegetable oil until transparent. Add carrots, bell bell pepper and mushrooms and mix. Braise until soft.

4. Then add stuffing, seasoning and salt. Keep stuffing on the heat for 2-3 minutes and remove from the stove. Add minced garlic, butter and egg white.

5. You can leave the stuffing like this or make it more tender. е. grind it with a blender.

6. Knead the dough for the rolls. Mash soft butter and salt.

7. Pour remaining warm milk into a large bowl (110 ml). Add butter and starter and mix together. Sift the flour and add to the dough in batches (5 minutes). At the end of the kneading process add 1-2 tablespoons of vegetable oil. Knead the dough until it is smooth and does not stick to your hands.

8. Form the dough into a ball. Put dough in a greased bowl and twist. Cover the bowl with cling film and put it in a warm place to rise, ~1 hour.

9. Knead the dough once it has risen...

10... and divide into 3 parts. I have 2 parts of 260g - for rolls. And 1 part of 130g - for rolls decorations. Leave rolls dough, put dough for decoration in sachet and put in fridge.

11. Roll out the dough into 30 cm x 22 cm rectangular sheets.

12. Place stuffing.

13. Fold in the dough on both sides, ~2 cm...

14... And roll up a rectangle...

15... into a roll. Place the rolls on a baking sheet lined with kitchen paper. Do not wrap the rolls in cling film, but wrap them in plastic wrap so that the dough stays on and does not become chunky.

16. Prepare decorations for the rolls. Roll out the cooled pastry and cut out the shapes.

17. Using water (just a little) or whipped egg yolk "Glue" Shapes on rolls. Place the tray with the rolls in the oven, turn on the temperature to 40 C and let it rise until it doubles, ~ 20 minutes. Then turn the temperature to 190 C. Take the pieces out of the oven, brush them with whipped egg yolk and sugar, milk, and put them in the oven.

18. Bake pies until crusty, ~30 minutes.

Enjoy your cake! P.S. I know that the pie is not sweet, but I sprinkled powdered sugar, it does not spoil the taste of the pie. But it's optional. And we drink it with sweet tea. I baked 2 cakes on the same tray, where the circles baked faster than the flowers. So I had to powder them a little
