For the dough

  • Wheat flour / Flour (1-2 tbsp.l. for a dusting) - 240 g
  • Butter - 80 g
  • Milk - 60 ml
  • Sugar - 1 teaspoon
  • Yeast - 4 g
  • Sour cream - 40 g
  • Salt - 0,5 teaspoon

For the stuffing

  • Potatoes - 3 pcs
  • Onions (medium) - 1 pc
  • Champignons - 100 g
  • Sunflower oil - 2 tablespoon
  • Egg white - 1 tablespoon
  • Cream cheese (Hochland) - 100 g
  • Seasoning (dry, ground: coriander, zira, paprika) - 0.5 teaspoon
  • Black pepper - to taste
  • Salt - to taste

Optional

  • Egg yolk - 1 pc

How to cook Christmas tree pies step by step with photos


1. Boil potatoes in their skins, cool, peel and shred.

2. Prepare sourdough. Mix two tablespoons of flour with dry yeast and sugar. Add warm milk and mix together. Cover the bowl with a lid and put it in a warm place until a foamy cap forms.

3. Prepare pie dough. Melt butter in the microwave.

4. Cool the butter a little, add salt, sour cream, and starter, beat with a whisk until smooth.

5. Sift flour into butter mixture. Knead in dough which is soft and not sticky to your hands.

6. Form the dough into a ball.

7. Grease a bowl and dough with vegetable oil (0.5 tablespoon) and cover with cling film. Place the bowl in a warm place so that the dough will rise twofold.

8. Prepare the filling. Peel onion and garlic. Finely dice onion and mushrooms, chop garlic with a knife. Fry onion and garlic in heated oil until transparent, 1-2 minutes.

9. Then fry the mushrooms for 3 minutes. Add to the mushrooms, onion and garlic, 1 tbsp. egg white, ground seasoning (coriander, zira, pepper, paprika) and salt.

10. We divide the stuffing into 6 parts and form dumplings with wet hands. Then flatten kolobloks and put in melted cheese.

11. Using a wet spatula close the stuffing and form cones. Height of cones = 7 cm. Let's put the plate with cones in the fridge.

12. Form the pies. Knead the dough when it has risen, cover the bowl with a towel and leave it to rise for about 20 minutes.

13. Divide the dough into 6 portions and roll into balls.

14. On a lightly floured chopping board, roll out one after the other into a circle, F=19 cm. Then dust a little on top of the circle and cut in the middle.

15. Then cut into 5 semicircles.

16. Place the half-circle on the circle and wrap it in dough.

17. Make such a Christmas tree. Let's put it in the fridge and make another Christmas tree.

18. Pinch the bottom with a final strip of dough. Trimming and smoothing the circle I had small scraps. I rolled them into a ball and then rolled out a small circle. Brush the bottom with beaten egg and glue the circle.

19. Gently cover the dough pieces with cling film and allow them to rise for about 30 minutes. Then brush with whipped egg yolk and bake in a well heated 180-190 C oven for about 40 minutes or until crispy.

20. Brush hot pies with melted butter or sprinkle with water, cover with a towel. Decorate with toasted sesame seeds. Serve appetizer pies with hot sauce. Enjoy Enjoy!!
